Sausage Egg Casserole

This one's a keeper. I've made this twice during this Christmas season. One directly as the recipe stated, and one with the flour mixture left out, and used ham instead of sausage, and Muenster and Colby Jack mixture of cheeses because that was just what I had on hand at the time. Both dishes turned out wonderfully. I think this is the perfect breakfast casserole that isn't loaded with bread, and is incredibly versatile. Exactly what I was looking for. Awesome! Thanks!!

Crustless Spinach Quiche

It was alright. Even with taking into the account that mine was a little over done, so the texture was off, I give it a few stars just because I thought the flavors were a bit...meh. Nothing to write home about. My mother still liked it well enough, even if it was over done. :)

Marinated Scallops Wrapped in Bacon

Made it as part of my husband's Italian's side Christmas Eve tradition of The Feast of Seven Fishes. I used a nice thick cut bacon. My non-scallop eating husband even liked them. Easy and Delicious! I think we'll keep this in our Christmas Eve FotSF menu. Thanks!

Cranberry Gelatin Salad

Spanish Flan

My son had an International fair project for school and chose Spain. We wanted to bring in Paella and Flan (Everyone makes a dish from their country to share for dinner at the end.) We used this recipe for it. I've never made custard, and I was intimidated to do this, but it was incredibly easy and turned out wonderful. Was also fun for my son to help with. I am not a "flan fan" but everyone who enjoys flan talked about how delicious this particular recipe was.

Grilled Halibut with Cilantro Garlic Butter

Made with Tilapia. Served with broccoli and a Cilantro Lime Quinoa. -Quinoa cooked in chicken broth, and when done, toss in cilantro, garlic, salt, and lime juice. - (Had a lot of cilantro I had to harvest from our garden!) There was a lotof green on our plate, but I wasn't worried about presentation, since it was just for us and the kids. :) Kids and Husband loved it .

Make Ahead French Toast

Worked out wonderfully! I used a bit less milk, and cooked about 50 min. Also added cinnamon, as a personal preferance. The pecans are a must. Baking them with the sugar mixture takes the dish to a whole new level. Even our picky eaters had seconds.
