Cubanos Frijoles

This was easy, tasty and pretty close to a lot of Cuban food I've had. Didn't have any Chipotle powder, so I opened a small can of chipotles in adobo sauce, chopped up 4 of the peppers and added them along with the adobo sauce. Yummy. Thanks for sharing this great recipe!

Baby Back Ribs

My fiancee, whose brother used to cook at a rib place, quickly declared these the best ribs he's ever tasted! I put a little dry rub on before the BBQ sauce, and popped the ribs under the broiler for a couple minutes at the end for that sticky texture on top. MMMMMMMMGOOD! Thanks, Ken, for an awesome recipe that will be used frequently in my house!

Quick and Easy Alfredo Sauce

WOW! An easy and impressive Alfredo sauce; and with less fat than the real deal, I daresay. I used Neufchatel to lower the cream-cheese fat even further. Only other change I made was using 4 cloves of fresh garlic put through a fine garlic press instead of the garlic powder. Such a simple and TASTY recipe; thanks!

White Cheese Chicken Lasagna

This was FANTASTIC! BF says best chicken lasagna ever. I upped the garlic because we love it, upped the basil a bit, used fresh sauteed spinach (used 3/4 lb., but 1 lb. would have been better)and added 1/2 cup white wine to the bechamel sauce. Wow. Thanks Lisa for an amazing recipe!

Delicious Ham and Potato Soup

This is a great recipe, and I give it 5 stars even though I felt it would be (ONLY SLIGHTLY) lacking had I not tweaked it just a bit. I know everyone cringes about changes, but these are really minimal, and the soup would be very good without them. So here goes: I added a can of white corn, a little bit of thyme and sage, and melted a little cheese into the béchamel sauce before adding. Truly stellar. Thanks, Ellie11, for a fantastic recipe!

Shiitake Angel Hair Pasta

Excellent recipe! I had some fresh shiitakes and didn't know what to do with them; this was perfect! Only change I made was to add some thinly sliced mini red and yellow bell peppers to the sauté.

Asian Coleslaw

I must admit I'm a sucker for peanut sauce... this was AWESOME! What a great twist on coleslaw. Didn't want to buy 3 kinds of cabbage, so I used just green and red. Otherwise, no changes, and none needed!

Trinidad Stewed Chicken

Wow. This was really tasty. Being from New Orleans, I like it HOT, so I used more red pepper. Also added some Jerk seasoning paste to the marinating rub, and marinated the chicken (I used 4 lbs of bone-in thighs) for several hours. What a great recipe! Thanks.

Slow Cooker Chicken Taco Soup

Excellent recipe! I had to make a couple of substitutions based on what I had on hand: I didn't have tomato sauce, but I had an 8 oz can of chipotle sauce -- definitely kicked it into high gear, so not for the heat sensitive crowd. I didn't have chili beans, but had a can of charro beans to add along with the (drained, rinsed) black beans. I frequently find cooking with beer adds a bitter/metallic taste to the food, but I tempered it by adding some shredded carrot and a tsp of baking soda to counter the acidity, and it was awesome. Don't skip the beer! topped with cilantro, green onions, cheese, tortillas and sour cream for a fantastic meal. Thanks, Patti!

Burgundy Pork Tenderloin

Easy and incredibly tasty... my favorite combination! Only changes I made were to leave out the celery and add celery powder and ground thyme to the seasoning sprinkled on the tenderloins prior to cooking. Delicious! Thanks for a great recipe.

Roasted Asparagus with Herbes de Provence

OH....MY....GOD.... This is way too amazingly good to be so simple to prepare! Tried it for the first time with fresh asparagus from my Dad's garden. Could not be more perfect. Our new favorite way to prepare asparagus. Thanks for a stellar recipe! Absolutely no changes necessary.

Grilled Portobello Mushrooms

VERY tasty! Marinated it longer, but no worries. These were juicy and perfect, served as an accompaniment to filet mignon. Would be just as well suited as the "meat" for a burger. Will definitely be using this one again. Thanks!

Terrific Turkey Chili

Great tasting turkey chili! Like many, I made a couple of changes based on what was on hand: no zucchini (but will surely add next time for another dimension), used chipotle flakes instead of red pepper flakes for some added smokiness, and added a can of chili beans. Really turned out well. Thanks for a great recipe!

Ronaldo's Beef Carnitas

WOW! I upped the spices based on other reviews and added some Chipotle flakes for smoky heat, but otherwise prepared as directed, in the oven. It came out moist, tender and DELICIOUS. Be sure to keep the rendered juices to pour over the shredded meat -- keeps it moist and holds lots of the flavor. Made tons of tasty tacos. Even better the next day!

Spinach and Orzo Salad

Delicious! I recommend reserving 1/3 of the dressing until just before serving; the pasta absorbs some of it while it's chilling; adding the last bit before serving assures it's not dried out. Fresh basil makes a big difference, too. Thanks for a great recipe, Christine!

Slow Cooker Adobo Chicken

GREAT recipe, Adrienne. I did follow others' suggestions, adding the peppercorns, bayleaf, some chicken broth and white wine, and used a mix of red wine/balsamic vinegar. I didn't have fresh ginger, but had fish sauce with ginger (minced chunks of it), so added some of that. Tossed in some Vietnamese basil and a wedge of lime at the end for extra flavor. Easy and tasty!
