Grilled Portobello Mushrooms

VERY tasty! Marinated it longer, but no worries. These were juicy and perfect, served as an accompaniment to filet mignon. Would be just as well suited as the "meat" for a burger. Will definitely be using this one again. Thanks!

Black Bean and Salsa Soup

Who knew black bean soup could be so easy? I tried this on a whim, looking for something quick to serve alongside Ronaldo's Beef Carnitas from this site. I don't prefer it to more traditional black bean soup, but considering how simple it was to make, it really was delicious. Will keep it in mind for those last-minute needs. Thanks, Maryanne!

Ronaldo's Beef Carnitas

WOW! I upped the spices based on other reviews and added some Chipotle flakes for smoky heat, but otherwise prepared as directed, in the oven. It came out moist, tender and DELICIOUS. Be sure to keep the rendered juices to pour over the shredded meat -- keeps it moist and holds lots of the flavor. Made tons of tasty tacos. Even better the next day!

Trinidad Stewed Chicken

Wow. This was really tasty. Being from New Orleans, I like it HOT, so I used more red pepper. Also added some Jerk seasoning paste to the marinating rub, and marinated the chicken (I used 4 lbs of bone-in thighs) for several hours. What a great recipe! Thanks.

Asian Coleslaw

I must admit I'm a sucker for peanut sauce... this was AWESOME! What a great twist on coleslaw. Didn't want to buy 3 kinds of cabbage, so I used just green and red. Otherwise, no changes, and none needed!

Authentic and Easy Shrimp Curry

This was easy and quite tasty. Only substitution I made was Madras curry powder for the curry leaves, which are hard to find here. This one's definitely a keeper! Thanks for sharing your recipe.

Lentil Soup

A nice, filling lentil soup. I forgot the Parmesan, but added a dollop of sour ceam before serving. Tried the Parmesan with leftovers, and it definitely adds another dimension. Thanks for a tasty recipe!

Baby Back Ribs

My fiancee, whose brother used to cook at a rib place, quickly declared these the best ribs he's ever tasted! I put a little dry rub on before the BBQ sauce, and popped the ribs under the broiler for a couple minutes at the end for that sticky texture on top. MMMMMMMMGOOD! Thanks, Ken, for an awesome recipe that will be used frequently in my house!

Quick and Easy Alfredo Sauce

WOW! An easy and impressive Alfredo sauce; and with less fat than the real deal, I daresay. I used Neufchatel to lower the cream-cheese fat even further. Only other change I made was using 4 cloves of fresh garlic put through a fine garlic press instead of the garlic powder. Such a simple and TASTY recipe; thanks!

Brazilian Black Bean Soup

I made a few additions -- some diced jalapeno pepper, a can of diced Ro-Tel tomatoes with green chiles, some diced ham, and lots of cilantro. Good recipe; citrus perks up the mix. Thanks!

Slow Cooker Adobo Chicken

GREAT recipe, Adrienne. I did follow others' suggestions, adding the peppercorns, bayleaf, some chicken broth and white wine, and used a mix of red wine/balsamic vinegar. I didn't have fresh ginger, but had fish sauce with ginger (minced chunks of it), so added some of that. Tossed in some Vietnamese basil and a wedge of lime at the end for extra flavor. Easy and tasty!

Terrific Turkey Chili

Great tasting turkey chili! Like many, I made a couple of changes based on what was on hand: no zucchini (but will surely add next time for another dimension), used chipotle flakes instead of red pepper flakes for some added smokiness, and added a can of chili beans. Really turned out well. Thanks for a great recipe!

Zucchini Herb Casserole

Really enjoyed this one; it's hard to find something new and different to do with zucchini. Fiancee really liked it, too. Only changes I made were adding more garlic, cuz we're garlic nuts, and some chopped onion for a bit more flavor. Thanks!

Coconut Lentil Soup

I used a can of coconut juice (with shredded bits) and a little cow's milk instead of the soy milk and coconut. Also added fresh cilantro, and pureed about 1/3 of the soup after cooking. Very tasty! Will definitely use this one again.

Cubanos Frijoles

This was easy, tasty and pretty close to a lot of Cuban food I've had. Didn't have any Chipotle powder, so I opened a small can of chipotles in adobo sauce, chopped up 4 of the peppers and added them along with the adobo sauce. Yummy. Thanks for sharing this great recipe!
