Mid-Eastern Chicken Thighs

Simple but very tasty! I added some sliced roasted red peppers; otherwise prepared as directed, allowing more generous curry and garam masala as the author suggested in her own comments. Thanks for a great recipe; got rave reviews from my fiancee!

White Cheese Chicken Lasagna

This was FANTASTIC! BF says best chicken lasagna ever. I upped the garlic because we love it, upped the basil a bit, used fresh sauteed spinach (used 3/4 lb., but 1 lb. would have been better)and added 1/2 cup white wine to the bechamel sauce. Wow. Thanks Lisa for an amazing recipe!

Shiitake Angel Hair Pasta

Excellent recipe! I had some fresh shiitakes and didn't know what to do with them; this was perfect! Only change I made was to add some thinly sliced mini red and yellow bell peppers to the sauté.

Aw-some Cole Slaw

Too sweet for my taste, so I cut back the sugar to 1/4 cup and upped the lemon juice to 3 Tbsp and the vinegar (used apple cider vinegar) to 2 Tbsp.Other than that, added some celery seed (what Cole slaw is complete without it?) and it was perfect! Thanks for a great recipe!

Pork and Shrimp Pancit

Easy pancit recipe! Definitely add some snow peas and carrots. I also added fresh cilantro and ginger, a little sesame oil and a little rice wine vinegar to round out the flavors. Yum!

Roasted Asparagus with Herbes de Provence

OH....MY....GOD.... This is way too amazingly good to be so simple to prepare! Tried it for the first time with fresh asparagus from my Dad's garden. Could not be more perfect. Our new favorite way to prepare asparagus. Thanks for a stellar recipe! Absolutely no changes necessary.

Garlic Parmesan Olives

This really makes those bland canned black olives POP! I was very surprised to find that canned olives are measured by their dry weight, so the 6 oz. can is what would normally be a 14-15 oz can. Great for an appetizer, and awesome atop a salad.

Spinach and Orzo Salad

Delicious! I recommend reserving 1/3 of the dressing until just before serving; the pasta absorbs some of it while it's chilling; adding the last bit before serving assures it's not dried out. Fresh basil makes a big difference, too. Thanks for a great recipe, Christine!

Amazing Pork Tenderloin in the Slow Cooker

This was good; I added some sage & thyme for more herb flavor. However, I wouldn't use tenderloin next time. It's such a tender cut of meat to begin with; cooking the bejeezus out of it just seems to ruin it. Maybe a chunk of pork loin or butt next time; something with a little more collagen to break down.

Red Lentil Curry

I used yellow curry paste, and a can of diced tomatoes rather than puree. It was delicious! Maybe both puree and diced tomatoes would be even better... I plan to experiment with different curry pastes (masaman, red) to see which one is best, but I'll bet they're all tasty in their own way. Thanks for a great lentil recipe which works well as a side or a vegetarian main course.

Burgundy Pork Tenderloin

Easy and incredibly tasty... my favorite combination! Only changes I made were to leave out the celery and add celery powder and ground thyme to the seasoning sprinkled on the tenderloins prior to cooking. Delicious! Thanks for a great recipe.

Mild Cheesy Chicken Enchiladas

Very tasty! I used boneless chicken thighs and spiced them up before cooking with Adobo seasoning and Chipotle flakes, then chopped them up after cooking. Added a can of enchilada sauce, which I used as a thin layer on the bottom of the pan, then poured the rest over the enchiladas before adding the cheese sauce, tomatoes and olives. Had to thin out the cheese sauce with some milk to make it melt better, but otherwise no worries. Thanks for a great recipe!

Homemade Black Bean Veggie Burgers

These were really good! Nice to have a fresh veggie burger alternative. Despite draining the beans and onion/bell pepper/garlic mix, I did need to up the bread crumb content a little, but that's easy to adjust as needed. I added some fresh corn; thinking about adding chopped mushrooms next time. Spice mix was perfect. Thanks for a wonderful recipe!

Grilled Portobello Mushrooms

VERY tasty! Marinated it longer, but no worries. These were juicy and perfect, served as an accompaniment to filet mignon. Would be just as well suited as the "meat" for a burger. Will definitely be using this one again. Thanks!

Black Bean and Salsa Soup

Who knew black bean soup could be so easy? I tried this on a whim, looking for something quick to serve alongside Ronaldo's Beef Carnitas from this site. I don't prefer it to more traditional black bean soup, but considering how simple it was to make, it really was delicious. Will keep it in mind for those last-minute needs. Thanks, Maryanne!

Ronaldo's Beef Carnitas

WOW! I upped the spices based on other reviews and added some Chipotle flakes for smoky heat, but otherwise prepared as directed, in the oven. It came out moist, tender and DELICIOUS. Be sure to keep the rendered juices to pour over the shredded meat -- keeps it moist and holds lots of the flavor. Made tons of tasty tacos. Even better the next day!
