Mango Chicken

Reviewed: Jul. 30, 2013
This recipe is good but needed a few revisions. I cooked the chicken and then removed it before adding the onions. It was much easier to stir this way. I took the advice of a few of the other reviews and only used 1 1/2 c. of orange juice/pineapple juice combination. Make sure you only use half of the cornstarch (use 1 tbsp + 1 tsp w/ the 1/4 c. hot water). After I added the cornstarch, I put the chicken back in, covered and simmered for a few minutes to let the chicken absorb the juices. I thought it was really good and I definitely got the mango flavor. Next time I will definitely try marinating the chicken in soy sauce first!

The Best Chicken Fried Steak

Reviewed: Sep. 5, 2012
Best chicken friend steak ever. Hands down! We used Cholula hot sauce (A little less than called for), and it wasn't quite enough. Next time we will use the full tablespoon. We will be making this many more times in the future.

Baked Chicken and Stuffing

Reviewed: Aug. 14, 2012
This was good but I thought it turned out a little runny. I think I might add less chicken broth to the soups next time I make it and also bake in a layer of vegetables between the chicken and the soup mixture. Very tasty though and my kids loved it!

Slow Cooker Chicken Taco Soup

Reviewed: Aug. 10, 2012
So good and so delicious. My kids sucked it down faster than I could put it in their bowls. The chips add a really nice crunch. I used fresh, diced tomatoes and I used frozen corn, because we didn't have any canned. We used a Wheat beer, which made it have a nice, smooth flavor. It turned out wonderful!

Slow Cooker Beef Pot Roast

Reviewed: Aug. 10, 2012
So easy and very good! The beef was so juicy and tender - it fell off my fork! We didn't have all the vegetables so we added broccoli and I also added potatoes, because I couldn't imagine pot roast w/o potatoes!

Slow Cooker Chicken and Dumplings

Reviewed: Aug. 10, 2012
Delicious!! I only used one can of biscuits and it was plenty. The chicken is so tender and the biscuits just melt in your mouth. I read the other reviews AFTER I already added the water, but I just threw in a chicken bullion cube w/ the water and it tasted great. Definitely a keeper!

Baked Penne

Reviewed: Jul. 31, 2012
This recipe was really good and very easy to make. The only thing that I didn't like is that in the ingredients you are supposed to have 3 c. of hot noodles, like you just have those on hand. It does not add the time it takes to cook the noodles into the total cooking time nor does it tell you to cook them anywhere. I got the sauce completely done, and then saw that the noodles were supposed to be already cooked. Other than that, it was very delicious!

Slow-Cooker Fish Chowder

Reviewed: Jul. 21, 2012
This soup is so delicious! The bacon adds a really nice flavor to the seafood. We had a frozen halibut filet, so we just put the whole filet into the chowder 1 hour (as it says in the recipe) and then just used a fork to separate it. VERY GOOD!

Butternut Squash Soup

Very creamy and delicious, but almost TOO creamy. The two packages of cream cheese make it incredibly rich; almost too rich to finish a whole bowl.
