Guacamole

This recipe is a WINNER! I can't tell you how many times I've had guacamole that was just so-so. Yuck. This recipe kicks it up a notch with onion, garlic, cilantro and lime. I mash up the avocado so it's about 75% smooth and leave the tomatoes fairly chunky, say 60%. I like texture. I'm a texture girl. A good guacamole recipe will make you very popular with your friends and family. This guacamole is paired with a good organic chip. Spectacular.

Refreshing Cucumber Salad

This is a wonderful, quick go-to salad for summer. I drain off the cucumber and tomato so it doesn't make the mayo and vinegar dressing watered down. This salad won't keep for more than a day, so make your serving size accordingly. Of course, this recipe is so good, you may not have much left over anyway. Refreshing, nutritious and cold. Yum.

Chicken Breasts with Lime Sauce

This is a GREAT summertime dish. The combination of the thin breasts lightly breaded with the lime & butter sauce is da bomb. I would never have thought to combine these two elements on my own, so I guess that's why I need to keep coming to this website for fresh ideas! I did cut back on the butter, as others did; but other than that, this recipe stands up just fine. I paired the chicken breasts with a cool cucumber salad, and *bam* major summertime dinner winner!

Classic Peanut Butter Cookies

This is the exact cookie I ate as a child! Crispy on the corners and soft in the middle. Yum. I followed the recipe, except used creamy NATURAL peanut butter and organic white whole wheat flour. As always, I use natural peanut butter - despite the rumblings of my critics - and get a irresistible peanut buttery flavor out of this recipe. Who needs all that/those nasty high fructose corn syrup, trans fat, additives and preservatives? Not me, I can tell you that. This recipe is a home run.

Chicken Florentine Casserole

I'm with VICSGARDEN on this one - there's no need to pre-cook the chicken and use all that cheese! Follow his directions and you'll end up with a first rate Chicken Florentine. In fact, this dish is so satisfying and filling, it'll stand up to any main dish I can think of, and with lots of nutrition to boot. And, as always, the combination of flavors - chicken, cheese, mushrooms, spinach and bacon - is what makes this dish such a H-I-T at my house.

Tomato Bisque II

Outstanding! This is a no-fail tomato bisque soup. I used fresh tomatoes - because I had them and have this thing about canned food when fresh is available - and substituted organic white whole wheat flour. This was very hearty with chunky tomato bits for some attitude and a cream base. I stuck to the recipe, but could see maybe adding a little garnish for guests, just to dress it up a little. Other than that, this is a wonderful soup, elegant. Also, I learned how to properly seed and peel tomatoes! Time consuming but a worthwhile culinary skill, right?

Quinoa Tabbouleh

This is spectacular. I needed to spice it up a bit, so added a dash of cumin, cayenne pepper and turmeric. Awesome dish. I think it's the combination of smooth, mellow quinoa with the more crispy, crunchy vegetables. IMHO I'm think that's the key to any good recipe.

California Cherry and Walnut Salad

As with many of these salad recipes, the combination of flavors is what makes it da bomb. The walnuts complement the cheese, the cheese complements the chicken...Well, you get the picture. The chicken strips makes this a more substantial salad, and served with a nice baguette, will make a wonderful lunch or dinner. After I eat one of these salads I feel a huge blast of good nutrition blow through my body. So much better than junk food! IMHO, a cheddar can sub for the goat cheese, if that's what you have, but the other ingredients are kinda critical to the body of the salad. I don't like to deviate too far from the original recipe. What's the point?

Celery Seed Dressing

Wonderful combination of flavors. This dressing has real k-i-c-k! I used extra virgin olive oil instead of vegetable. For me, it has a better flavor and health benefits.

Triple Chocolate Whoopie Pies

OMG! Eating these Whoopie Pies is like being transported back in time to 1960 to your Mommy's kitchen, scraping the bowls clean, helping her put the filling inside the cookies, and getting a bellyache because you ate too many... I made these for a impromptu party, so "whoopie" seemed appropriate. The ingredients are definitely old school - marshmallow cream, Cool Whip, instant pudding and a prepared cake mix. But, it's balanced with Philly and semi-sweet baker's chocolate, or at least that's what I rationalized. Put it all together and you have one rich, filled cookie that will have your guests begging for more. You'll be very popular. Others complained the cream filling tears the cookies when you combine the two. This was not my experience. The cookies were cooled for about ten minutes and the filling - which I kept in the fridge and was careful not to over whip - went on smoothly. The results were perfection. I would highly recommend this treat for your chocolate loving friends, and they're perfect for a party. Refrigerate before serving. You should probably just ignore the fact Cool Whip, marshmallow cream and instant pudding are far from "natural" and fix these for a special occasion. That's what I did.

Jamie's Cranberry Spinach Salad

This spinach salad is even better than the SEVEN SPINACH SALAD, also offered here - and the difference is the toasted almond slivers. Toasting the almonds makes all the difference, as it brings out the flavor soooo much more than just serving them raw. Be careful not to burn these - it's easy to do. These salads are just wonderful. The combination of flavors is what makes them so outstanding. In this recipe, it's the complementary flavors of cranberries, toasted almonds and spinach. I threw in a little mixed salad greens - about a cup - with baby spinach leaves. The dressing pulls it all together. This salad is killer. I feel healthier already!

Super Seven Spinach Salad

Once again a HIT with the tantalizing combination of flavors: the apple complements the red onion complements the cranberries complements the almonds...Well, you get the picture. And the poppy seed dressing and spinach base pull it all together. I even omitted the cheddar and it was still killer.

Romaine With Apple, Pecans and Blue Cheese

The combination of flavors in this salad is JUST RIGHT. As a big fan of red onion, I knew this salad would have some bite, but a good salad has some bite. That's what makes it good. The apples compliment the avocado, compliment the red onion, compliment the nuts...and it's all pulled together by a wonderful yogurt/blue cheese dressing. I'll fix this one again and again and AMAZE MY FRIENDS!

Peanut Butter Bars I

OMG!!! I made this for friends and ended up eating the entire batch myself! I'm such a PIG! FYI, I used natural peanut butter and think this will make a significant difference, as compared to processed PB.
