I've made it twice and it's already a family favorite. I like it because it's flexible. I've made with red potatoes once and orzo pasta the other time. It's better with the potatoes...

Easy! Everyone loved it. Be sure to really trim the roast before you cook it. It will be worth the time later on.

Green Chile Spinach Quiche

My 11 year old asked for seconds! I made without the shell and it was perfect. The frozen spinach was a little too "spinachy." Next time I will use fresh or omit all together.
