Sizzling Chicken Skewers

This is so good! I served it to about 55 guests over the weekend, and everyone raved about it and asked for the recipe. I let it marinade for about 24 hours. The only modifications I made were cutting the Cayenne in half and substituting the other half with Paprika (I was nervous that it might be too spicy), cut back on the salt a little – it just seemed like too much and used the lower sodium soy sauce. This recipe is defiantly a keeper - don’t let the diverse list of ingredients keep you from trying it. It is so tender and delicious!!!

Broccoli and Rice Stir Fry

This recipe was EASY and DELICIOUS. Even the broccoli dislikers in my family loved it. I did add slighly more soy sauce than the recipe called for, but other than that it was great. I will make this again. Thank you for the post!

Mushroom Stuffed Chicken Rollups

I'm going to have to work on this one. My family isn't used to nutmeg, so if I make this recipe again I will either cut it back to 1/4 tsp. or omit it all together. It was okay overall, just not what my family is accustom to.

Poblano Chicken Enchilada Casserole

I've learned a couple of things, while making this recipe, that I'll do differently next time. First, I'll roast and peel the Poblanos before slicing them. Second, I'll shred the chicken as I'd like a more authentic texture. It's very rare that I prepare a recipe as written, and I did feel it was lacking a certain flavor, maybe I'll discover it next time around.

New England Clam Chowder I

This recipe is delicious. My husband commented last night that it was restaurant quality. I sent some home with my neighbor, and he told me today that it was the best Clam Chowder he'd ever had. I only had chopped clams on hand, so I used those. I added all of the liqid from both cans, added about 3 stalks sliced celery, one diced carrot, and chopped, fresh flat leaf parsley. I only had a pint of half and half, so I added 1 cup of milk to make the difference. Also, I added more chopped bacon and parsley when serving. I will definately keep this recipe in my recipe box and make again and again. Thanks so much for sharing your wonderful recipe!

Spaghetti Sauce I

I sort of doubled this recipe. I used a 28oz can of crushed tomatoes plus a 15oz can of tomato sauce. I only used about a tablespoon of sugar (I was a little nervous about that part of the recipe). Oh, I added a can of sliced olives, but other than that I pretty much followed the recipe. I did use Penne Rigate instead of spaghetti as it holds the sauce so much better. Plus it's bite size! Oops...almost forgot, I sprinkled some italian cheese blend and freshly chopped flat leaf parsley over the top. My family gave this recipe a 5 thumbs up! My husband commented that it was the best spaghetti I'd ever made, and he already like my original out-of-a-jar recipe.

Garlic Butter

YUM....YUM! I made Shrimp Scampi using this garlic butter tonight. Tossed a little in some Linguini, and still have some left over for Garlic Bread tomorrow night. What GREAT flavor! I will definately keep some on hand at all times. I bet it would be great for sauteing veggies in.

Chow Mein Noodle Bars

This was an easy recipe. Because of it's richness I was able to stretch it further than the suggested serving. I did double the ingredients for the crust as I didn't feel it was enough to cover the bottom of a 9x13 baker. You will need to bake it a little longer though.

Bill's Sausage Gravy

This was the best sausage gravy I have ever cooked. It might be the best I've ever tasted for that matter. The only thing I would do different is to under season the gravy before adding the sausage. I forgot to allow for the saltiness of the sausage. Great recipe Bill. Thank you!

Corn Chip Salad

I served this at our 4th of July party, and all of our guests loved it. It's such a simple recipe, who would have thought it would be the talk of the side dishes? I did add a packet of taco seasoning to the meat mixture,and aggree that 8 oz of Thousand Island dressing is not near enough for our taste. I also used a blend of shredded mexican cheese instead of the cubed it called for. This is definately a recipe to take to a pot luck, as it makes a mountain of salad. You could cut the portions to serve a family though.

Apple Pie Bars

I made this for our 4th of July party. Defiately an "All American" dessert. My family requested last night that I bake it again. They didn't have to twist my arm too hard. It's actually a very easy recipe, and I love how flaky the crust turns out. Crusts can be a tricky think to accomplish. It was definately a nice twist to the Apple Pie. Much easier to serve too. I can see that this has definately become a family favorite.

S'more Brownies

I made this for the 4th of July, and our guests couldn't devour them quick enough. I would maybe next time bake the brownie a little longer before topping it with the s'mores mixture, and cover it with foil to avoid too much darkening of graham crackers and marshmallows. I will definately bake it again in the future. It would be a great dessert to take to a potluck. It really goes further than you might think, given the fact that it's so rich.
