About this Cook
I believe the BEST foods come from your own kitchen! I love to utilize left-overs, make the most out of bargain purchases, and having diversified menus with plenty of variety!
My favorite things to cook
Spaghetti Chicken Fried Steak Broiled Salmon Chicken Caldo Pasta Salad Chicken Salad Healthy Slow-Cooker Meals Stuffed Cheese & Jalapeno Burgers Chicken Divan Crispy Tacos Falafels Black Bean & Cilantro Burrito's Mashed Potatoes Split Pea Soup Cabbage Rolls Lasagne Sausage-Potato AuGratin Creole Steak Fajita's
My favorite family cooking traditions
Making Dumplings for the Chicken & Dumplings The Infamous Peach Cobbler Tamales & Pigs-in-a-Blanket at Christmas Stubbing the Toe with the Sage in the Thanksgiving Dressing Using Grapefruit in Fruit Salad-LOL The Best Pumpkin Cake ICING EVER!
My cooking triumphs
I make it a point to think about the week's menu in advance. This takes a lot of pressure off of considering "what to cook" each night.
My cooking tragedies
Really never had one, other than spilling something that requires LOTS of clean-up or having to go to the store to replace.

Seminary Muffins
Used the recipe exactly as written but heeded the advice of Sarah Jo, using only 1/2 the required oats. THEY WERE SCRUMPTIOUS! Perfect consistency and SO MOIST! I considered using dried fruit instead of chocolate chips, but had none on hand, the chocolate made the mini-loaves, sinfully indulgent. I will not only make them again, I'll try different variations because they've been greatly enjoyed! No-one believes the recipe is completely void of oil and butter. Thanks Christa!

Slow Cooker Chicken Taco Soup
OH MY GOODNESS, a wonderful, easy, GREAT tasting meal! I paired this with a superb grilled corn, tomato, red onion, basil, cilantro salad, so I omitted the can of corn for the recipe--it was a HIT. Adding 1 can of diced green chilis, about a 1/2 T of Mexican oregano, 2 t of cumin, and a sparse T of sugar (to cut the acid in 1 can of tomatoes w/green chilis), I topped the soup with fat free sour cream, grated colby-jack, and crushed tortilla chips. This is in my recipe box FOREVER!

Onion-Roasted Potatoes
The man friend was complimentary, said they are fabulous and we have to have them again!!! He loved the "little crunchies" as he called them. And NO OTHER recipe has been this EASY!!!
