I make it a point to think about the week's menu in advance. This takes a lot of pressure off of considering "what to cook" each night.

Really never had one, other than spilling something that requires LOTS of clean-up or having to go to the store to replace.

Slow Cooker Chicken Taco Soup
OH MY GOODNESS, a wonderful, easy, GREAT tasting meal! I paired this with a superb grilled corn, tomato, red onion, basil, cilantro salad, so I omitted the can of corn for the recipe--it was a HIT. Adding 1 can of diced green chilis, about a 1/2 T of Mexican oregano, 2 t of cumin, and a sparse T of sugar (to cut the acid in 1 can of tomatoes w/green chilis), I topped the soup with fat free sour cream, grated colby-jack, and crushed tortilla chips. This is in my recipe box FOREVER!

Onion-Roasted Potatoes
The man friend was complimentary, said they are fabulous and we have to have them again!!! He loved the "little crunchies" as he called them. And NO OTHER recipe has been this EASY!!!

Italian Sausage Soup II
LOVE LOVE LOVE THIS!! Boyfriends sister made it for us in California, told me where she got the recipe, so I had to try when we got home. This is fabulous, easy, and hearty! I used 1 lb Italian sausage with 2 links of "spicy" Italian sausage to give it an extra kick, adjusted vegie and spice quantities to compensate and added 1 1/2c uncooked pasta shells. I made extra so we could share with a friend who's girlfriend was OOT, he loved it too! We served it with toasted Bollilo's-MmmmmMmmmm GOOD!
