Juicy Roasted Chicken

I followed this recipe exactly, which I never do and it came out perfect. I honestly cannot imagine changing a thing, and this is coming from someone who enjoys doctoring recipes. Sometimes simple is best!

Roasted Asparagus with Parmesan

Super-Delicious Zuppa Toscana

The kids beg for this delicious soup. This has become a family favorite! I use kale instead of spinach and add a touch of bacon fat instead of bacon, otherwise I leave it the same.

Cha Cha's White Chicken Chili

This is a great base. I made a few changes. I like thicker chili so I added a can of retried beans. It thickens it up without changing the flavor. On a whim I added a can of cheese soup. Wow! That added the right creaminess and yummy taste. I didn't add any additional cheese, but instead sprinkled a little on top. Husband had three helpings, kids and myself had two. This is a keeper.

Balsamic Glazed Carrots

I followed the suggestion of roasting the carrots in 2T olive oil for 30 minutes then tossing in balsamic vinegar and roasting another 5 minutes. Served with balsamic glazed drizzled over for fantastic carrots I'll make again and again.

Marinated Pork Tenderloin

Didn't have sherry so I subbed balsamic vinegar. Will double the marinade next time, it was SOOO good. Served with risotto and asparagus.

Grilled Salmon I

Baked at 400 for 17 minutes, covered with foil. With the remaining marinade reduced in a sauce pan and added chopped pecans at the last minute. This is a winner, in fact my 10 year old and I fought over the last piece. Yummy!

Quick and Easy Pimento Cheese

Robin's Chicken Enchiladas

This is a family favorite. It's an easy recipe to alter to your liking. I prefer fresh garlic added with the green onion instead of garlic powder. I also try and save time and effort and layer like a lasagna instead of rolling, saves so much time.

Zucchini Casserole II

Excellent recipe. Made a few minor changes to make it more to our liking. Used half of a medium onion, shredded one carrot, and used half of the butter. I mixed it all together, baked for 10 minutes then topped with cheese for the last 10, per other suggestions. It's a quick and easy recipe for leftover zucchini.

Salmon Cakes II

A new favorite. I use crushed crackers instead of bread crumbs and omit the outer coating. I put it on my stoneware and put in the oven at 350 for about 20-25 minutes, but have left it in longer with good results.

Charley's Slow Cooker Mexican Style Meat

This was VERY spicy, and I didn't add nearly as much hot sauce as it called for, and I left out the diced green chile pepper. We used wild pork for this recipe. I think next time I'll cut way down on the hot sauce and still leave out the pepper.

Bar-B-Que Sauce

Excellent sauce. I tweaked it slightly with what I had on hand. Instead of mustard powder, dijon. Instead of garlic powder I used minced garlic. I also add pepper flakes instead of hot pepper sauce. A dash of Jack Daniels put this over the top. My husband took this to work, and the guys couldn't get enough.

Mexican Casserole

This was a huge hit with my family. I sauteed onions and garlic with the chicken. I didn't drain the beans, and added creamed corn since I had it on hand. Next time I'm going to throw it all but the cheese and chips in the crock pot, and add those at the end.
