Hot and Sour Chinese Eggplant

Yum! I used what I had: unpeeled regular eggplant cut into 1/2 x 1 x 2-inch slabs; and hot sauce instead of chile pepper and chili oil. it's a flexible recipe (some suggestions in other reviews look worth trying) that turned out great.

Pollo Fajitas

I marinated the chicken for 30+ minutes at room temperature, but it wasn't very flavorful. I also didn't like sauteing the onion and pepper with the chicken rather than separately. I doctored up the leftovers by adding fresh pineapple chunks and sweet-sour sauce adapted from Sweet and Sour Chicken I, and that turned out to be delicious.

Easy Sour Cream Cheesecake

Wow-- I am so glad I made this fabulous cheesecake, but I'm going back to graham cracker crusts. The idea of two sticks of butter in addition to 16 oz cream cheese and 8 oz sour cream makes me feel too guilty, and I don't like fat-free sour cream. For a topping, I used a potato masher on strawberries and cooked them with sugar to pour over individual pieces; it was a very good addition.

Poppy Seed Tea Cakes

I must have made my first batch of cookies too big; they took about 14 minutes to cook, and I ended up with only 2 dozen cookies. That's OK; they were delicious, and friends asked for the recipe.

Mongolian Beef and Spring Onions

What a wonderful quick delicious dinner. I adapted to what I had: a mix of ribeye and top round instead of flank steak; light brown sugar and molasses instead of dark, onion powder instead of garlic (my husband's allergic). I used less sugar and threw in broccoli (thanks to other reviews), and everyone in my family loved it. That doesn't happen often.

Spicy Sweet Potato Soup

On my second time, I made this in quantity and gave containers to a a few friends. We all love this soup. It's a very forgiving recipe. I used vegetable stock, grated lemon peel instead of lime zest, did not put tomato on top. I've made this starting with raw sweet potato cubes, and also with microwaved and then mashed sweet potato. My son thought it was a little too peanut butter-y but I liked the noticeably peanut butter taste. Great mix of flavors.

Penne Pasta Lasagna

Discovered I was out of lasagna noodles, so I found this recipe and adapted it. Used small shells, no meat, extra pasta and mozzarella. and flavorful tomato-based sauce. Yum! I like this recipe better than lasagna. It's a real comfort food.
