Broiled Lemon and Garlic Tiger Prawns

I used jumbo prawns, and the end result tasted more like lobster than shrimp. This will become a favorite go to for seafood at my house.

Chuck's Favorite Mac and Cheese

FANTASTIC and so easy. No need to make white sauce as I normally do for man 'n cheese. I layered with sliced Campari tomatoes from Costco. Wonderful!

We liked this, but it was not a great meal that I would repeat. The stuffing needs some spicing up, perhaps hot sausage meat would be a good addition.

Szechwan Shrimp

What a hit! Just the right amount of heat to satisfy all of us using the crushed red pepper flakes. After sauteeing the onion and garlic for thirty seconds, I stir-fried the shrimp until just pink. I removed the shrimp from the pan and stirred in steamed broccoli, carrots,and mushrooms, then I added the (tripled) sauce until hot and bubbly. Finally, I returned the shrimp to the mixture to heat them through.

Lemon and Cilantro Shrimp

I used extra large tiger shrimp and served this over a bed of romaine since I'm counting carbs. It was such a light tasting yet flavor bursting dish, that I can't wait to invite some guests for dinner to serve it again.

Twice-Cooked Coconut Shrimp

Loved this even though I can't stand coconut. Made this through the frying stage, then refrigerated. Popped them in the oven for 10 minutes to finish before serving. Next time I'll add a little more hot sauce for a bit more fire.

Cracker Salad

Everybody loves this! Scale down the ingredients if you won't be able to eat it all at one serving. I assemble all the ingredients separately, and mix them together at the last minute before serving.
