Chicken Florentine Casserole

Great flavor!! I did make a few changes. Used frozen chopped spinach, olive oil instead of butter, whole milk instead of cream. Left out the bacon bits. Cooked the raw chicken right on top of the spinach mix for 25 minutes at 350 then topped with cheese for another 10 minutes..did actually broil it to brown the cheese for a minute or two only. This could be a family favorite!!

Really easy , delicious and pretty served in a trifle dish! I added blueberries too for added color. Amazing how the pineapple juice keeps even the bananas from turning brown!!

Irresistible Irish Soda Bread

This doesn't resemble Irish Soda bread as I know it.The overall taste is good, especially warm out of the oven, but once it cooled down, we didn't care for it.

Quick Gnocchi

SO easy,So good! I ended up using a little less flour, just enough so it's not sticky and you can roll it out! My oldest son was in Italy recently and this was one of his favorite foods. I never made it because it was so labor intensive. He raved about my "homemade from scratch" gnocchi!! I'll never tell!!!! Thanks!!!

Never Fail Fruit Cake

Wow! How easy is this!! I only had 1/2 the coconut, but it was more than enough. I made a 1/2 recipe and it made 22 cupcakes. Baked till brown on top, about 40 minutes and they are delicious! Great recipe!!

Basic Ham and Bean Soup

Great, easy too! I put everything in my pressure cooker at once since I didn't have alot of time and it was done to perfection in 2 hours. Used 4 cups veggie broth and 4 cups water, left the salt out till the end, it didn't need much. Thanks, I'll be making this again!

Wow, this was really good! I only had a tiny bit of cheese, so I used a can of cheddar cheese soup! I think I will make it with the soup again. Spinach nice and creamy with the soup, not dry at all! Thanks, great, fast & easy!!
