Nikki's Creamy Crock Pot Potato Soup

Reviewed: Jan. 6, 2012
Had to thicken this on the stove, does not work in the crockpot. Way tooo salty! Decreased the red pepper depending on how spicy we like things.

Used cheddar cheese and I could not get the cheese to melt and mix in with the rest of the soup. Other than the cheese it was very good.

Cinnamon Swirl Bread

Reviewed: Feb. 22, 2012
If you don't have a bread machine another user recommended: 1. Stir yeast in with warm milk and water. 2. I large bowl mix dry ingredients 3. Stir in yeast mixture add egg and butter. 4. Knead, adding a little flour at a time until the dough is smooth and not sticky. (kneaded in raisins at this point) 5. Let rise in warm place (covered with damp cloth) 6. When doubled, punch down, and let it rise again. When doubled again, Followed the rest of the recipe instructions.

Best Egg Rolls

Reviewed: Feb. 9, 2012
Ratio of meat to cabbage was way off. We added a lot to make this work. During the cooking I got curious so I looked up other egg roll recipies on other sites and decided to doubled the cabbage, added soy sauce, added some scrambled egg, etc. Still seemed like too much pork.

Best Chocolate Chip Cookies

Reviewed: Jan. 31, 2012
I followed the recipe, but ended up with very flat cookies. They started out soft in the center, but with in an hour started to get hard all the way through. next time I will follow the suggestions to decrease the white sugar to 1/2 cup, increase the brown sugar to 1 1/2 cups. Make sure to take out of oven before they look done. One reviewer suggested refrigerating the dough for at least an hour before baking so that they don't flatten. Another reviewer suggested leaving them on the cookie sheet for 10 minutes after cooking, instead of moving them directly to the cooling rack so that they stay chewier. I will try these tips next time.

Blackberry Cobbler II

Made it with mulberries instead because that is what I had in the freezer. Cooked filling in a pot on the stove and then transferred to oven safe bakeware.

Peppermint Chocolate Fudge

Reviewed: Dec. 18, 2011
Yumm. It is disappearing fast. I had to stir it a little towards the end of the cooking help all the chocolate melt. I made 2 batches, one with the 1/2 teaspoon peppermint and one where I doubled the peppermint extract. Would recommend doubling. I could barely taste the peppermint as called for in the original recipe. Very dense fudge.

Wonton Wrappers

Reviewed: Feb. 9, 2012
Tried to use the wrappers to make egg rolls. Okay, but too thick and still mushy on the inside even when cooked until almost burnt. Even tried rolling them thinner than suggested in this recipe.

Open-Faced Turkey Sandwiches

Next time I think I'll decrease the Worcestershire sauce. I added a little extra olive oil because the bread seemed too dry. I used cheddar cheese instead of mozzarella because that is what I had on hand.

Creamy Crab and Pasta Salad

Okay. added lemon pepper. Doubled the sauce and it still seemed dry and sticky once it had chilled int he freezer. My husband added milk to his serving to make it less dry. I think that helped some.

Pizza Dough III

Reviewed: Feb. 6, 2012
Turned out great. I cooked the pizza a 375 for 30minutes and it could have cooked a little longer, but it was done all the way through. I also melted some butter with garlic salt and brushed it on the crust. I did need to add just a little more flour than the recipe called for to make the dough less sticky. Make sure to use bread flour. I used all purpose flour the second time I used this recipie and the crust was not very good. Awsome crust if you use bread flour. 0.25 oz = 2 1/4 teaspoons of yeast

Weekday Pot Roast and Vegetables

Great easy dinner; started dinner 1st thing in the morning. Substituted my own homemade gravy. Halved the recipe so that it would fit in my smaller crock pot and we were still eating it several days later.

I had to use all-purpose flour instead of bread flour, but it still turned out great. I added a little extra yeast. Soft and fluffy inside with crisp outside.

Mulberry Pie

Reviewed: Dec. 31, 2011
Easy recipe that is easy to customize. I added a 1/4 cup of ground flax seed instead of adding the extra flour that some recommended. Used more mulberries than what the recipe called for. Also used frozen mulberries. Took a little longer to cook than the recipe said, maybe because the mulberries were still mostly frozen when I put the pie in the oven. Used the amount of sugar as listed in recipe, good amount, but could use a little less sugar if pairing with ice cream. Milk on top made the crust too soggy.
