Slow Cooker London Broil

The flavor was fine, but I don't think I'll use this recipe again. I think I'll stick with marinating and grilling instead of slow-cooking.

Spinach and Orzo Salad

Wonderful! I used fresh basil and mint from the garden, and one 10 oz bag of spinach that I placed in a bowl and cut up with scissors. We all loved it! I am VERY CAREFUL to avoid pine nuts imported from China, after having come down with a nasty condition called "pine mouth" last year.

Thirty Minute Meal

This was great the first time I made it. But this time used 2 bags of fine shredded cabbage, skipped the water, added a can of diced tomatoes, and a can of chopped green chiles. Served with a side of shredded cheese and plain yogurt (used like sour cream), and it was a huge hit - no leftovers!

Whole Wheat and Honey Pizza Dough

Great results. Based on other reviews, I: 1) dissolved the honey in the warm water before adding the yeast, 2) let the dough rise a second time after spreading it on the pizza pans. I pre-baked the crusts before adding toppings. Tried to spread the dough thin enough for two 11" "thin crusts" but couldn't quite make it. Used "Easy Pizza Sauce I" from this site, for a simple and healthy pizza (if you use that sauce, make sure to reduce the amount of water).

Easy Pizza Sauce I

Everything was great except for the amount of water. I wish the author could edit the recipe for those of who get in a hurry and don't read the reviews! I simmered mine sauce for a while to reduce it.

Crustless Spinach Quiche

My whole family loved this. I had to get the Muenster cheese at the deli by weight, and guesstimated a pound. Turned out that 3 cups shredded and lightly packed was around 10 oz. I kept the onions tender-crisp, and put the filling into a pre-baked pie crust. It was fabulous, and we loved biting into the crispy onions.

Spicy Red Bell Pepper Soup

I was in a hurry so I used the food processor and chopped each vegetable. When I got to the point of cooling the soup in order to blend it, we were all starved so we ate it as-is. It was fantastic. I loved the flavor combination. I will definitely save this as a recipe for when we have guests!

Quick and Easy 20-Minute Chicken Posole

This tastes a lot like the canned posole I buy in the Mexican markets. It was quick, easy and delicious. My kids asked that I add "med" chilis next time instead of "mild." This recipe is definitely a "keeper." UPDATE: Today I used a pork loin cut into pieces instead of the chicken (I still used chicken broth). It was fabulous. I also use two cans of chilis.
