Ground Beef Enchiladas

These were good, but there didn't seem to be enough beef flavor--it was somewhat overwhelmed by the chicken soup. Next time I will try using 8" flour tortillas so that I can fit more beef in them, and using an extra package of taco seasoning mix, but the meat didn't seem to be seasoned quite enough. Also, the 6 6" tortillas did not fit well in the 7x11" dish, it works much better in a 9x13". I definitely will try this recipe again!

Creamy Chicken and Rice Soup

This was a great recipe--so full of flavor! It wasn't exactly soup like, but my family and I didn't mind. I don't like whole pieces of onions or celery, so I substitued with onion powder and celery salt, and it was still great and full of flavor. I made it yesterday, and what was left over has already been eaten!

Banana Crumb Muffins

Oregon Salmon Patties

This is a great salmon recipe--nothing needed changed, and I used all the reserve liquid and it didn't make the patty too moist. My fresh parsley went bad before I could use it, so I just used dried parsley flakes instead and it still turned out great! I will be making these again!

Alfredo Sauce

Great recipe, especially for a quick dinner fix--I heated up two cans precooked, cubed chicken breast in a little bit of olive oil and a clove of garlic, then removed it from the pan and made double the sauce. I added the chicken back in along with the parsley after adding the cheese (I used fresh parmesean and it was great) and garlic, and continued to simmer while stirring for about five more minutes. The result was a great sauce!

Strawberry Pretzel Salad

This is a great recipe, it turned out perfect. A word to the wise, however--I needed my 9x13" pan for dinner, so I thought I'd try to use a 7x11" pan for the pretzel salad instead. That was a mistake--I ended up having to leave out some of the delicious strawberry topping!

Camp Cornbread

I've already reviewed this, but I had to write and rave more about this recipe. This cornbread tastes so great, and it is so perfect! I'd been looking for this recipe for a long time, and this is just right! I've made this a few times since I found the recipe. The last time I made it, my company was fighting over the last pieces! I think I'll double or triple the recipe next time!

Amy's Garlic Egg Chicken

This was a great recipe--the chicken was so moist, full of flavor, and golden brown. My only recommendation would be to maybe line the pan with foil so you don't get such a stuck on mess when you're through eating.

Beef Noodle Shepherd's Pie

This was good-- I added a can of corn to the mashed potatoes, and some sprinkled cheese on top. I still felt the beef needed more flavor, however... I will play around with this recipe and see what I come up with. But my boyfriend liked it, and he doesn't like much!

Sweet and Sour Sauce I

This was a good sauce--not quite your ordinary sweet and sour, but good none the less. I did substitute 1/4 cup of white sugar for brown, and I had no vineger on hand so I had to use lemon juice instead. I also cut the soy sauce down to 1 tablespoon. But the sauce turned out really well, and I served it with chicken last night. Thanx!

Easy Lemon Bars

This was a really good lemon bar recipe, however it really needs to have double the filling. Also, the amount of lemon juice the recipe calls for makes for a really mild lemony flavor. I would suggest, if you like the bars to be lemony, increasing the amount of lemon juice. We used 5 tbls in ours. This recipe passed my boyfriend's taste test--and we've been through every box recipe the stores have to offer!

Breaded Chicken Fingers

These chicken fingers were great--very moist and tender on the inside, nice and crunchy on the outside. I did add a few cloves of minced garlic to the marinade, and some poultry seasoning to the breading. These chicken fingers looked great, and tasted great! Thank you for sharing!

Better Than Sex Cake II

This was absolutely fabulous, and I don't really care for chocolate! I served this for some friends, and when one guy was asked if it was better than sex, he said "No... OMG it's so moist!" We all got a pretty good laugh out of it. I used milky way ice cream topping instead of just the caramel, and topped it with chopped up Heath bars--it was so great!

Best Ever Meatloaf with Brown Gravy

The meatloaf itself was good, however an extra egg might have helped it hold together better. The gravy, however, wouldn't have had any flavor if it weren't for the mushrooms and onions. I probably will make it again, but I think I will mix a package of beef gravy mix into the beef broth and then add it to the mushrooms and onions.

Oven Fried Parmesan Chicken

This was really good--the skin was golden brown, crispy and delicious, and I don't usually like the skin on chicken. The only changes I made was adding more garlic than the recipe called for, and adding some poulty seasoning and garlic herb seasoning to the breading.

Strawberry Sauce Chicken

I didn't like this recipe at all (I don't really care for sweet meat), but my boyfriend and daughter did. However I didn't have the ingredients listed. I couldn't find just plain strawberry nectar, so I used strawberry banana nectar, and I was short on that. I ended up adding a few dobs of strawberry preserves in the mix. But not a bad recipe according to the family!
