Beef Marinade I

This marinade is great with chicken and vegetables especially mushrooms! I omitted the ground clove as that didn't sound good to me, Also, I only marinaded the chicken and mushrooms for 4 to 5 hours. It was PLENTY of time for the marinade to do it's magic. I may try ground or fresh ginger the next time...

Good Old Fashioned Pancakes

These were great! Just one little helpful comment; do not use kosher salt. It does not desolve and incorporate into the mix. I will only make these pancakes from now on. I am also going to try buttermilk and see how that tastes. Yum I am sure!

Six Can Chicken Tortilla Soup

WOW! This is a great soup! My family loves it. It is great how it is, although my family likes it with a little spice. I use seasoned black beans, drained a little but not rinsed, tomatoes with mild green chiles not drained, and instead of caned chicken I buy Tyson's Southwestern Seasoned Chicken Strips found in the freezer section. I cut the chicken into cubes. I also add chile powder, oragano, cumin and the juice of one lime. We top our soup with tortilla chips, cheese and cubed avacado. This soup is so good the second day I double the recipe.

Spinach and Strawberry Salad

So delicious. I did make a few adjustments. I didn't have any white wine vinager so I used red wine vinager. I threw in a little piece of a sweet onion, ommited the sesame seeds and used Splenda instead of sugar. I put all the ingredients for the dressing in a blender and processed it for a minute. It helps keep the oil and vinager together.

Potato and Shiitake Mushroom Gratin

I loved this recipe. I subsituted sweetpotatoes for the gold yukons. It was so good. I used just regular white mushrooms and only 1 1/2lbs. I don't know where you would put the rest. This is great as leftovers.
