Creamy Hot Cocoa

WOW this is awesome! I'm sipping some right now as I review this recipe. Used only 1/2 cup sugar, dark chocolate cocoa and instead of vanilla I used flavored half & half. I topped it with frozen whipped cream. My picky son loved it and my 7 year old neighbor said it was the best hot cocoa he ever had. Thank you I will be using this again and again!

Cream Cheese Frosting II

Very nice frosting! Used more sugar to cut the tartness of the cream cheese. I had to omit the nuts since my neighbor has a nut allergy so instead of vanilla I used a walnut liqueur. It really added a nice flavor. I will be using this recipe again - thanks!

Vegan Cupcakes

Best cake recipe EVER! This was for my husbands birthday and he loved it! Had to use regular milk (out of the almond) and we put it in an 8x8 for a larger cake instead of cupcakes. We also put rainbow sprinkles in the batter for fun. Still turned out moist, delicious and awesome! I'll try it again with the almond milk. I'll be using this recipe again and again and again! Thank you!

Mary's Roasted Red Pepper Dip

I have used this recipe for years but forgot to rate it! Everyone loves this and it's always requested. I replace the mayo with sour cream (I hate mayo) and it's great. Low-fat or fat-free ingredients also work fine with this. You can also add corn or black beans to bring it to another level of yumminess!

Waffles I

Very good recipe. I used applesauce instead of oil for a healthier waffle. Highly recommend using the applesauce anyway for flavor. Everyone liked this, including my very picky 7 year old! Will make again :)

Green Bean and Portobello Mushroom Casserole

Finally used this version after printing it last year. Very yummy! Stirred in the cheddar cheese just before baking and topped with the fried onions. Everyone loved this. I'll make it again!

Quinoa with Sweet Potato and Mushrooms

Very good! Omitted cayenne pepper and used shallots - loved the flavor. Even better as a cold dish. The next day I put this in a wrap with mango chutney and grilled chicken and found my new lunch for the week!

BBQ Beer Can Chicken

I used this recipe as my template - I sprayed the chicken with cooking spray, rubbed on my favorite spices and used the rest for the beer can. Wood chips are a must! I used indirect heat (one side of grill turned off), kept the temp at 350 turning the chicken around halfway thru. Best chicken ever - moist and tender and flavorful. We are SO using this to make dinner for Father's Day. Best thing? No hot oven to overheat the house during the summer. Thanks, this is a keeper! :)

Awesome! Used fat-free spray butter to cut the fat - still turned out tasty and delicious. The second time I made it I increased the sauce since it was dry the first time. Much better! New family favorite. Thanks for a great recipe.

Pineapple Sauce For Cake

This is great! Ran the mix thru a food processor to break down the chunks and added a little more cornstarch to make it thicker. When cooled, I added the sauce to a tub of fat free whipped cream and used it as a topping for angel food cake. Perfect for a low-fat dessert. My husband loved it and we brought the cake to a birthday party where it disappeared! Mixed with low-fat cream cheese this would be excellent as a fruit-dip or you could use the sauce for a topping on cheesecake! Thanks for a great recipe.

Garlic-Lemon Double Stuffed Chicken

Nice! Flavorful and moist. Used a fat-free cream cheese so the flavor was not overwhelming at all. Dipped in low-fat buttermilk, not milk and it worked out great. You don't ned the butter on top but I would like a stronger lemon flavor next time. Overall we loved this recipe and will make it again soon.

Carrot Rice

Very nice. Used jasmine rice and sesame seeds since that was what I had in stock. I also use coconut milk for the rice - gives it a sweet flavor. This turned out great. Don't use too much ginger like I did, but fresh is the best. Thanks for a great dish.

Portobello Mushroom Sauce

This was very good! Used red wine and at the very end added a dollop of sour cream to the mixture. The sour cream adds a tang that we like. Will make again. Thanks!

All American Roast Beef

Awesome! Made for the first time for Christmas dinner. Turned out perfect! I used Italian seasonings to on the beef and put stock on the bottom of pan. Also let the meat rest on counter for at least an hour. Took out at 135 degrees and it cooked until it reached 160. Big hit, everyone loved! Thanks!

Orange Cake

I made this cake once years ago and my mom asks for it all the time! It's just enough orange without being overpowering. I add a little extra lemon extract & OJ. The glaze is awesome too and I use it for other recipes. Thank you for such a great tasting cake.

Chicken Fried Chicken

Awesome! My husband said to use this for our chicken parm. I used some cornflakes instead of potato and added about a teaspoon of Italian seasoning. This works great with thin sliced chicken or tenders. I'm making this one again and again!

Veggie Lasagna

Wonderful! Even my picky Italian husband loved this. I used asparagus, carrots, corn, yellow pepper and spinach. If you can't find the herb & garlic dry soup, vegetable works just fine. I only used a little corn - don't listen to other reviews - some corn in vegetable lasagne tastes great. I had enough left over to make a little 8x8 for the freezer. Use the no boil lasagne noodles (Barilla) and you cut your preparation time in half! Thanks for a great make again recipe!!
