Roquefort Pear Salad

Great recipe! I didn't have time to make the dressing so I mixed 1 t of Dijon mustard with 1 t maple syrup (read somewhere it's healthier than honey as a sweetener). Then I add some Italian dressing I already had made up to the mixture and voila!

Avocado Soup with Chicken and Lime

WOW! Best soup I've had in a long time. I had made chicken tacos but had a lot of meat left over, so I used it in place of the chicken and fresh tomato. Came out great! I agree the fresh lime juice really adds a special flavor.

Creamed Spinach

I doubled the garlic for my family. It tasted great, but was rather thick. I'm used to more liquid in my creamed spinach.
