Best Brownies

I have a much more complicated brownie recipe that I use to impress people, but I was pleasantly surprised at how good these came out. I was craving something and this hit the spot.

Stuffed Shells with Meat Sauce

I was surprised at how much I liked this. I added a little bit of sugar to sweeten the sauce a tad. Also added Italian seasoning. Super easy!

Easy Decadent Truffles

Pumpkin, Sweet Potato, and Leek Soup

I thought this soup was very good. However, next time I am going to omit the whipping cream. When I put it in my blender to puree it, the cream "whipped" so my soup was more like a mousse. I don't think it even needs cream. I think it would be fine on its own.

Lentil Chili

Shortbread Cookies IV

I made this with a group of afterschool kids, and it was a big hit. We dipped the cookies in chocolate, which made them crumble a little bit, but it was still delicious and fun to do with kids.

Tofu Salad

Thai Peanut Chicken

This was very good. I doubled the sauce as suggested. I also served it over thin udon noodles with I lightly stirfried in the pan after I removed the chicken mixture. Definitely use low sodium soy sauce.

Shrimp Burritos

This was so good. To simplify things, I made rice in the microwave, added salsa to it, and then cooked it in a frying pan for a few minutes to crisp it up. It saved a lot of time.

Toasted Garlic Bread

I've made this bread a dozen times, but without the mozzarella. I toast half a loaf and put the other half in the freezer for the next week. Excellent!

Deb's Scallops Florentine

I liked this, accept next time I'm going to figure a way to make the cream sauce lighter- although delicious, it gave me indigestion b/c it was just too heavy. I also chose not to blanch the scallops first, and instead baked the dish longer.

No Bake Cookies V

I'm still trying to decided whether I love or hate these cookies. I could not get them to harden and I think it is because I used all natural peanut butter. I suggest using Jif or something to avoid that problem. I think I would like them more if I used good quality instead of Hersheys.
