Best No-Bake Cheesecake

Reviewed: Jun. 21, 2003
Thanks to other reviewers, I used another 1/3 cup of sugar. Also, after I began making the dish I realized I only had half of the heavy cream that I needed, so I added a healthy spoonful of sour cream to make up for it. I couldn't tell the difference, taste-wise, but it never did set up very well, it was more like cheesecake soup. I figure that was due to the sour cream, tho? I gave this a high rating because it was actually very delicious, super easy, and my family loved it, even eaten out of ice-cream bowls! I will definitely try this again with the correct ingredients.

Cheeseburger Noodle Casserole

Reviewed: May 19, 2003
This is "hamburger helper" type food, but it was quick, easy, and turned out well. I left out the onion soup-mix entirely, subbed elbow mac for the spaghetti, used a couple of real garlic cloves instead of the garlic salt, and spiced it up with "mexican" flavored diced tomatoes and some chili powder. I also diced up some green bell pepper and added it to the frying meat. This is a good basic recipe that's easy to modify to suit your needs.

Deep Dish Brownies

Reviewed: May 18, 2003
Like other reviewers, I left out the baking powder and used 2 eggs instead of 3. I also used just a tad more unsweetened cocoa than called for...these revisions should give you the "dense, fudgy" result as opposed to the "cakey, light" variety. Otherwise, great recipe!!

Clark Gable Pancakes

Reviewed: May 18, 2003
For me, the recipe as written produced pancakes that were very pretty and fluffy, but virtually tasteless. I reduced the amount of baking powder and, per other reviews, added healthy amounts of vanilla and cinnamon, and we were able to enjoy these somewhat.

Baked Macaroni and Cheese I

Reviewed: May 18, 2003
I made sure to avoid the "raw flour" taste by thoroughly cooking the roux, and cutting the amount of flour to 2 tbsp. I used a sharp cheddar and threw in some jack and colby to boot...The bacon and garlic flavors are fine, but we much preferred the dish the second time around when I left out the onion. I will definitely use this recipe again, it is much more versatile than my old stove-top method!

Chicken Noodle Casserole I

Reviewed: May 8, 2003
This is a new favorite for us! It is easy to throw together on a weeknight, and it's a hit with everyone in my family, including my picky pre-teen. I have made this both the "fattening" way, and using the lower-fat soups & sour cream, and either way it comes out delicious. (My husband actually preferred the flavor of the lower-fat version!) The only thing I usually add is a small can or two of mushrooms, or maybe some peas. I have also substituted regular bread-crumbs for the topping with good results.

Mall Pretzels

Reviewed: May 8, 2003
This recipe was so much fun for my 11-year old and I. We were a little clumsy shaping the first few, but once we got the hang of it, we were able to get them to look presentable. We used a cinnamon-sugar mixture on half, and garlic salt on the rest. Both varieties were wonderful, just like our favorites at the mall. One caveat, tho...these didn't keep well for us at all. We ended up throwing away the ones we had left the next day.

American Lasagna

Reviewed: May 8, 2003
This was really great lasagna. Like other reviewers, I had to add extra sauce, and I used a half ground beef, half italian sausage mixture instead of all beef. I also threw in some crushed red pepper flakes and went with the 9-noodle configuration instead of 12...other than that, this recipe produced an almost perfect lasagna for me!
