Chicken Salad Wraps for Two

Tonight, (Monday) I made Chicken Salad Wraps. I bought Chicken, thinking it was chicken breasts. (Boneless) I checked out some recipes on here to see how to make it. (Ingredients wise) I was going to use the grill, but the pieces were so thin, and a nasty storm came by. So I added some olive oil to the pan and cooked 3 pieces at a time. (Lightly brown, 6 thin pieces total) Added a little bit of Green Onions (chopped, a few pinches) and some celery hearts (1/4 cup, chopped) a little bit of onion (1/4 cup, chopped) and 2 tablespoons of Mayo (Kraft) and a few slices of green grapes. Sliced the chicken, stir all the ingredients. Added it to an Olive Oil Whole Wheat Wrap (heated 2 wraps, 15 seconds). It was good. My boyfriend liked it as well. Something light to eat on a warm day. Next time I will cook it earlier and let it sit in the fridge for a few hours, so that it is all the same temperature. It was nice to mix it all up and experiment with the thin slices of Chicken. I had slices of Pears on the side with my wrap, just to add something extra.

Sounds really good. You might try that with some salad greens and wrapped in a tapioca wrapper, like the fresh spring rolls.
