Black Forest Cake I

Fabulous. The best black forest cake recipe I've tried, and I've tried a lot. The cake baked up beautifully, the cherries were perfect, and the whole thing just came together wonderfully. The only change I made (and I heartily recommend it)is that I made a syrup out of 1/2 cup reserved cherry juice, 1/2 cup sugar, and 1/4 cup Kirsch (cherry liqueur - added after the juice/sugar simmered for a bit and then cooled). I drizzled this syrup over the cake sections before I spread the cherries and whipped cream on. It added moisture and tied everything together. Yum!

Orange Soy Pork Loin

Wow, phenomenal. It made the tenderest, juiciest, most flavourful pork loin I've ever had. I can't speak to the rosemary issue, though, as I had none so I omitted it. I added extra garlic because I am a garlic fiend! If you don't make a gravy out of the drippings you are losing out. I will definitely make this again.

Curry-Coconut Shrimp

This was absolutely fantastic. The only changes I made were I doubled the coconut milk, curry powder, and crushed red pepper flakes, and just before I served it I added some shredded coconut. Wow. I will definietely make this again. I think it would also be great with tofu or chicken instead of shrimp.

Leftover Chicken Croquettes

Excellent base for chicken croquettes, but I had to add spices to make it more interesting. Based on other reviewers, I added a third egg, some parmesan, some basil and oregano. It was fantastic! I served it with cranberry sauce. Next time I think I will add some pistachios, and cardamom to give it a Moroccan feel, or else some curry powder, turmeric, and paprika for an Indian taste.

Easy Vegan Whole Grain Pancakes

Wow, absolutely fantastic. Light and fluffy, tasty, and satisfying in a way I never thought "healthy" pancakes could be. I will definitely make this again, and probably soon. I didn't have rye flour, so I just used whole wheat, and I used sunflower seeds instead of pecans. I also added two sliced bananas, although apple cubes would be good too. I needed to add another 1/4c - 1/2c of liquid, though, as it was more like dough than batter.

Honey Curried Roasted Chicken and Vegetables

Fantastic! I was a little skeptical at first, as the sauce just seemed...wierd. It was absolutely incredible, though. I made it exactly per the recipe and I will certainly make it again. I'm already scheming up other ways to use the sauce!

No-Bake Chocolate Cookies

A little soft and sticky. Instead of using 1 cup coconut and 3 cups oats I used 2 cups of each. I think next time I would use 3 cups coconut and 2 cups oats. Otherwise, very tasty.

Tasty Fried Eggplant Balls

Wonderful! I had to add a bit more bread crumbs to make the texture stiffer, but I may not have drained the eggplant thoroughly. Drain the egplant REALLY well and you might not have to add the extra. Very tasy way to use eggplant thank you so much for this wonderful recipe!

Date Filled Cookies

Excellent recipe! The cookie dough is so flavorful and combines really well with the sweet date compote. I think I made mine really big, but that let me put a lot of filling in each - which turned out super. Mmm. I will make these again. The only thing I changed is that I added some cinnamon and some lemon juice to the dates.

Czech Stuffed Green Peppers

The best stuffed green peppers I have ever tasted. My partner doesn't usually like stuffed peppers but she really liked these ones. The sauce was incredible, I think I may make it alone as a creamy tomato soup, it was that good. I made a few substitutions: I used veggie ground roung instead of beef, yogourt instead of sour cream, and I didn't have marjoram so I omitted it. It would probably be even better with beef, but making it vegetarian cut down on the fat.

Absolutely Perfect Palak Paneer

Fantastic! The most authentic tasting palak paneer I have made. Like other reviewers sugessted I doubled up on the spices. I also fried the onions etc in cooking spray rather than oil or butter, and I used fat-free yogourt.

Mom's Zucchini Bread

This is a great recipe, with a few minor changes. I wish I could give it a 4 1/2, but I'll be generous. So here's what I changed: like other reviewers I replaced half the oil with applesauce, and replaced some of the cinnamon with nutmeg, allspice, and ground clove. I also used brown sugar instead of white, seriously... why use tasteless old white sugar at all when you have tasty, tasty, brown yummyness. My zuke had more than 2c of flesh, so I used it all - I think it was around 3c. All these changes and this recipe turned out fabulous - it's my go-to zucchini bread now. Next time... chocolate chips!

Tomato Soup Cake I

Absolutely delicious. Definitely will make again. I replaced the tomato soup for low-sodium tomato soup and I omitted the salt. Also, I had no cloves so I added extra cinnamon and some nutmaeg and allspice and it was so spicy and yummy. Great recipe.

Great Mac and Cheese

I made it exactly like the directions but after simmering for almost 20 minutes it was still a runny mess. I had to add more flour to it in order to thicken it. There is way too much milk; it came out, not gooey and delicious, but like cheese sauce with a couple of noodles thrown in for texture. Maybe try to cut the milk down to 2 1/2 cups.

Best Brownies

Wonderful! Moist, chewy, not at all cakey. These were really fantastic. I even loved the icing, although I didn't like the vanilla flavour in it. I'll leave the vanilla out of the icing next time. A great basic recipe!

Oatmeal Chocolate Chip Cookies III

Very good, I subbed in non-hydrogenated margarine for butter and decreased it to 3/4 of a cup. Very good cookie. Just as a PSA though, just because there are no eggs doesn't mean it's safe to eat the raw batter. All of the danger in raw eggs comes from contamination by the shell. You are just as exposed if you touch an egg shell and don't wash your hands as you are if you eat a whole raw egg. The dangerous part in raw cookie dough is the raw flour, which can contain worms. Great cookie though!
