About this Cook
I'm just a good ole boy who likes to cook. I'm currently enjoying learning about new spices to use that I haven't been previously familiar with. Cooking is an adventure for me and I love spending my spare time learning more. I'm quite the perfectionist and won't give up on a recipe until I've tweaked it to where I want it.
My favorite things to cook
Hmm, I love it all but my favorites are mexican and italian. My absolute love is smoking meat. Brisket,ribs, pulled pork etc. I love to fire up the smoker, spend the day with friends and end up with finger lickin' food at the end of the day. Cooking brings me together with those around me. I absolutely love it!
My favorite family cooking traditions
My favorite cooking tradition is the prime rib we have every year at Christmas. It's always done perfectly and everyone enjoys to their hearts content!
My cooking triumphs
Learning recently about cumin and ginger. I've luckily acquired knowledge that I can use to whip up quick mexican themed or asian themed dishes quickly and easily. Other triumphs include learning to smoke ribs, brisket,pulled pork and many other things on the smoker.
My cooking tragedies
Grrrrrrrr, do we have to discuss this?? Anything I cook that doesn't turn out how I want! Burning one side of a grilled cheese sandwich(last night), over or undercooking a steak, forgetting to add an ingredient to a recipe and not realizing it until the food is on the table. The little things that keep me humble in the kitchen and remind me I still have a long ways to go before I am the cook that I aspire to be!

I've recently developed an affection for guacamole. For some reason I thought making it would be difficult. Apparently not! After watching it made table side at a restaurant recently I realized it was something I could easily make. When I saw avacados on sale the other day I thought "I gotta try this". The only change I made was instead of the cayenne I substituted 1/2 jalapeno, seeds removed, for 4 servings. It was FANTASTIC! This is an easy, quick, delicious recipe. Try it, you won't be disappointed!

Very Chocolate Ice Cream
Excellent, simple recipe. We used Ghirardelli semi-sweet chocolate and the level of chocolate flavor is EXCELLENT! We followed the recipe exactly and had absolutely no problems with it freezing or anything else. If you are a chocolate fanatic, try this and you'll be very happy. We doubled the recipe and folded in chopped up "butterfinger cups" at the end but the possibilities are endless! ENJOY

Garden Fresh Tomato Soup
My son suggested we have grilled cheese sandwiches and tomato soup one night for dinner. I immediately searched here and am glad I did. This recipe is very simple and it's very likely you will have all of the ingredients on hand already. Ok, I'll admit it, I too made a few changes. First off, I'm not a clove fan so they had to go. Instead I used about 1 1/2 teaspoons of granulated garlic and a pinch or so of basil. I started by sauteeing the garlic and onion together then added a the basil, chicken broth and tomatoes and followed the recipe from there. The finished product is great. I'm not sure if I'll ever eat tomato soup from a can again. This also gives me another idea for what to do with the leftover tomatoes I'm going to have from my garden this year!
