Apple Squares

These were great! I doubled the recipe, except for topping and omitted walnuts, for a 9x13 but added a heaping 2 cups of apples, per reviews. Normally I would make a recipe as-is the first time, but 1 cup of apples didn't seem like enough. Definitely making again, and except for chopping the apples, it took no time at all to make. I want to try drizzling with either caramel or a powdered sugar glaze next time and using applesauce in place of butter.

Garlic Chicken

The first time I made it as written except with chicken tenders. I thought it was a bit greasy. Second time was with Zesty Italian Dressing and chicken breasts. I added a little garlic pepper to the crumb/parmesan mixture. I liked the second time better, but I really think it's because of the tenders the first time and not enough cooking time to get a nice crispness on the coating. Definitely easy and will make again soon!

"Pantry Raid" Chicken Enchilada Casserole

I thought it was good, but not great. My boyfriend liked it all except for the beans (he said he doesn't like the texture, but maybe it's the taste too). The idea is great, I think I will modify it a bit the next time I make it. The only thing I didn't add was chili powder because I didn't have any (or couldn't find it). And the sauce did splatter all over, so I will be more careful with that next time and keep a close eye on it and turn the heat down - it was a pain to clean up.

Cucumber Sandwich

Terrific! Didn't have a ripe avocado but had some guacamole so spread some of that on. Pita bread would be perfect for this recipe! Really loved the comination of all the vegies/flavors. Definitely going in my "make often" section.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Made it exactly as written except didn't puree it. Loved the flavors. I think next time I will only use half the onion, add an extra apple (love that sweet potato/apple combo) and add extra ginger. Needs a bit of additional color, so may follow another reviewer's advice and add spinach. Didn't top it with plain yogurt, but that definitely would have been a good addition.

Iced Pumpkin Cookies

I only made a half batch because most of the pumpkin cookies I've made I haven't liked.. That isn't the case anymore! These are fabulous! I used White Whole Wheat flour and replaced the butter with applesauce and it worked so well! I put the glaze on then sprinkled with some cinnamon for some added flavor and "good looks". Making again! Next time I will share!

Two Ingredient Pumpkin Cake

I've tried the pumpkin with brownie mix and it was so-so. I was expecting the same for this. But, to my surprise, this was excellent! I made as it, stirred it with a fork until mixed. True that it doesn't level out while baking, but it did rise. It doesn't need frosting, but a cream cheese frosting or whipped topping would work. Either of those with some cinnamon or pumpkin pie spice mixed in would be good as well. Definitely a go-to quick, easy and healthier dessert that I will make again!

Amish White Bread

Super simple! I used 3 cups all-purpose flour and 3 cups whole wheat flour and decreased the sugar to just over 1/3 c. (reading other reviews) and it is delicious! Can't wait to make this again and do cinnamon bread or rolls. And this was only my third time making homemade bread and this is the best of them so far.

Simple Whole Wheat Bread

Amazing! Only the second time making bread and first time going solo, but it was super easy. I don't have any honey, so used 1/3 c. agave nectar and 1/3 c. sugar. Still works. Love the textrue, the flavor. I may do as others did and add flax seed (or similar) to the bread next time. Would be good for cinnamon bread or rolls as well which I will have to try. Super easy, super delicious!

Paprika Chicken with Mushrooms

The only real change was that I baked it. Still seasoned both sides of the chicken, maybe used a bit more paprika than stated, but I just guessed on all seasonings. Then topped the chicken with onion and mushroom. Melted a tablespoon of butter and drizzled over top then added some thin slices of butter around the chicken (approximately another tbsp, so the onions/mushrooms not on the chicken had some good flavor) Baked about an hour at 350 (thicker breasts). Served with whole grain wheat pilaf and a salad. Certainly a keeper and will definitely make again. I think a little white wine may be a good addition as well.

Braised Balsamic Chicken

I made this in the slow cooker and it was awesome! I used only 3 chicken breasts seasoned with black pepper and garlic salt. Then topped with some onion, 1/4 c. balsamic vinegar, the full can of tomatoes and then the dried herbs. It smelled like balsamic, but it wasn't overpowering in flavor. I loved it and I will make this again - slow cooker or stovetop as per recipe - doesn't matter!

Easy OREO Truffles

I actually like using the white almond bark as a coating on these. I also will chill them before dipping (freezer or refrigerator). I can't say enough good things about these - one of my all time favorite sweets!

Sugar Cookie Icing

I tried this icing for the first time this past week. One change I made was I used about 3 tsp. of water in place of the milk and used 1 tsp vanilla extract in place of almond. I loved the shiny look it gave and the colors didn't bleed (my cookie "frosting" always did). It was exactly what I wanted and even my boss at work made the comment "she could sell thesel".

The Best Rolled Sugar Cookies

This is the same recipe (except doubled) that I grew up with and helped my mom make and decorate since I can remember. The only thing I did differently was as an extra teaspoon of the vanilla extract. Took them to work this past week and all loved, even the one who doesn't like sugar cookies loved them (partially because they were thicker). I've never made another sugar cookie and don't plan on it either!

Pumpkin Spice Cookie

Too easy! I did add about 1/2 tsp. of pumpkin pie spice, as per other reviews. To half, I added some chocolate chips, but I will admit the ones without the chocolate are much, much better (and I love chocolate!) Start to finish it took less than an hour - can't beat that. In addition, it is cheap and healthier than most cookies! Will make again!

My Chili

I enjoyed this. I used the same ingredients, but different proportions. I used 1 pound ground beef, about 1/4 of a medium onion, 3 cloves garlic, 1 tbsp chili powder, 1 tsp oregano, the equivalent of 1.5 cans of tomato (I used home-canned tomatoes), 8 oz tomato sauce and 2 cans kidney beans (I added with the tomatoes) I like more beans than beef, so that is preference. I think I may try with (1 can) Mexican style tomatoes for a little kick next time, but the basic recipe is good and can obviously be tweaked to one's liking. (The way I made it, it almost filled a 3-quart saucepan.)

Ricotta Gnocchi

I have never made gnocchi or any similar from scratch, so I wasn't sure what to expect. I think I could have used a little more flour in the dough as it was hard to make the "ropes". (Eventually I got them where they were all fairly uniform.) The sauce was super easy and it actually went really well with the gnocchi - had the heaviness balanced out with a lighter sauce. Not sure if it was my favorite sauce, but it worked with this. May just sprinkle some mozzarella over top next time, instead of using the cubes. The only change I made was using garlic salt in place of the garlic powder (didn't have) and so I elimated the salt as well. It was much better than I expected it to be and will likely make again.

Cherry Crisp

This was a really good, easy recipe. I think next time I will decrease the amount of nutmeg or leave it out altogether- it was a bit too much for my liking - although it smelled wonderful! I used cold butter (sliced) and "mashed" it into the dry ingredients rather than melt it - a way that I have always made a crisp topping. ***The second time I used 1 tsp cinnamon and left out the nutmeg and I liked it better. I think the nutmeg was a bit too much in the original recipe***

Microwave Baked Apples

I've made this several times but with white sugar and cinnamon only and I don't always use butter. I usually section the apple or cut in half. I also use Granny Smith but I have used Pink Lady and it worked just as well. It's a great snack or dessert! I may add raisins next time - just because.

Twice-Baked Ranch Potatoes

I have done similar for an appetizer at a restaurant I had worked at, except I didn't include extra mashed potatoes (I used only what was scooped from the baked potatoes). Also I did not add cream cheese to mine. The flavor of Ranch potatoes are definitely great.
