Pumpkin Cake III

This was absolutely delicious. I followed along the lines of the suggested modifications and used some Apple Butter, and doubled the spice. Very moist. I will be making it again.

Chicken Fried Chicken

I did not have potato flakes, but figuring it was the starch that it brought to the party, I used a little corn starch instead. I also floured the chicken before the egg dip. This was the best breading I have made. It stick to the meat very well and came out good and crispy.

Black Magic Cake

Heavenly moist, rich and decadent! This batter is thin, but rises a lot, so use the recommended pan sizes. Much better than any pre-mixed cake mix.

Basic Cream Cheese Frosting

Delicious! Not too sweet with a distinct cream cheese flavor. The kids and I loved it on the Pumpkin Cake III recipe from this site. It kept for 3 days with no problems. This is my new cream cheese frosting recipe.

I preheated the pan as suggested by others and this recipe came out perfect! This is definitely a keeper. Since I only had a muffin pan as an option, I adjusted the cooking time to 15 minutes at each temp to adjust for the smaller size.

To Die For Blueberry Muffins

These are great, but my wife and I both agreed that they could use more salt as they were lacking just a little bit of flavor compared to most muffins, and the salt may have been all that was needed. We will be trying this again with more salt because they were still quite excellent! *EDIT* - I made them again with 1 tsp salt and buttermilk. Made all the difference in the world. I will probably still add in vanilla next time, but honestly, all these things were truly lacking to begin with was some added salt and a touch of sour from the buttermilk. I have upgraded my review to 5 stars because these changes made this an absolute stellar recipe.

Baked Teriyaki Chicken

This recipe was good, but needs some tweaking, thus the 4 star rating. It's close though, and with the proper tweaks I could see it being 5 stars. I'm sure the recommended changes in the comments are the right way to go, but since I have not tried them yet, I can't say for sure.

Big-Batch Butterscotch Cookies

These are fantastic! I used the ideas from many of the comments and used partially melted butter, added butterscotch chips and salt. I made large cookies from walnut-sized balls of dough, slightly pressed flat, baking them at 325. I made a full sized batch, and next time I will double the amount of butterscotch chips because one bag for a full batch is not quite enough. This is a large batch, but when making large cookies the batch goes pretty fast.

Chocolate Trifle

This recipe does not need a review to know it is good. How can you go wrong with layers of Brownies, Chocolate Pudding and Whipped Topping??? It is every bit as good as you would imagine, no surprises at all. The kids raved about it and protested when it was gone.

Best Brownies

Moist, chocolatey and rich. These are really good. They are not quite the traditional brownie flavor I am used to, tastes more like fudge interestingly enough, but they are still absolutely delicious. This recipe is a keeper.

Drop Biscuits and Gravy

These are nice, soft, crumbly biscuits good for crumbling up and smothering with gravy. There is not a lot of flavor, so adding extra butter or maybe even salt helps. I used double the amount of butter called for, but think it could still use more. Since these are designed to go with gravy, a flavorful gravy will make up for the lack of flavor. These are better than Bisquick, but my search for the perfect drop biscuit continues. I plan to make these again, using more butter and salt to see if that helps.

French Toast Casserole

This was good, in fact I really enjoyed it. My kids didn't like it as much. They ate it but said they would prefer to not have it again. The only fault I could find with it was that in a couple spots it was a bit eggy, tasting more like eggs than french toast, but 95% or more of it tasted fine to me. I probably won't make it again, at least not without some changes.

Beth's Spicy Oatmeal Raisin Cookies

These are wonderful! I used pumpkin spice in place of the cinnamon and cloves (my pumpkin spice has both, plus a few other spices). I also plumped up the raisins in warm water, and used all butter instead of shortening. These are easily among the best oatmeal-raisin cookies I have ever had! The kids and my mother in law could not stop eating them.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are really good and were a huge hit at home and with extended family. They are not the absolute best I ever had, but they are quite worthy of 5 stars as they are among the very best. I consider 4 stars as good but with flaws, or well above average. 3 stars are average, and anything below that is not good. These are a good 5 stars.
