Rachel's Cranberry Chicken Salad

Reviewed: Feb. 26, 2013
This was outstanding! You can tweak it any way you like! I only made a few adjustments dictated by what I had on hand, but the apples, cranberries, and nuts (I used roasted salted sliced almonds) give this salad such great texture and crunch! I will go back to this again and again if I have any leftover chicken! Thank you Rachel :)

Italian Sausage Soup

Reviewed: Feb. 7, 2013
Wow. I just made this and I am eating a bowl right now. It is amazing! I doubled the recipe and didn't stray very far, except I used canned diced tomatoes and some italian seasoning in place of the stewed because I didn't have them on hand. I used 1 can each of Northern and Pinto beans, and I cooked and added some farfalle pasta at the end when I added the spinach. Otherwise followed it exactly. I can see how you can improvise like crazy with this wonderful recipe. Thank you, Sallyjun! I am so glad I doubled it, because I'm sure leftovers will be even better!

Grilled Marinated Shrimp

Reviewed: Jul. 13, 2012
Very good recipe! I made it tonight on my gas grill and took the advice of another reviewer, only did 1 lb of shrimp and some chicken tenderloins as well. VERY tasty - I wouldn't change a thing! The hot sauce gives it a kick for sure :)

Marinated Pork Tenderloin

Reviewed: Feb. 21, 2012
This was incredible! I had to post a picture of it on the site as well! I didn't change anything at all except for doubling the marinade (including the cinnamon) so I could boil it down with some cornstarch and water (1TBSP each) to make a wonderful gravy. Too cold to grill here so I put it on a cookie sheet with silpat and baked it for 35 minutes, flipping the tenderloins about halfway through. It is a fantastic recipe! Try the marinade - as written!

Grandma's Chicken Chardon

Reviewed: Feb. 3, 2012
Made it just as directed except used 5 chicken breasts instead of 8 - and kept all other ingredients the same measurement. Used Progresso italian style bread crumbs. SO GOOD! And you don't feel TOO guilty eating it because it's baked not fried. Thank you for the recipe!

Roasted Vegetable Chicken

Reviewed: Jan. 12, 2012
Delicious and so easy! I used a sweet potato I had lying around along with the veggies stated, and used just 1 large onion cut into large sections. I used the sticky rotisserie rub from the site as suggested in place of salt and pepper (didnt have onion powder so I just left that out), 1 cup chicken broth instead of the water, and rubbed the chicken with olive oil before applying the rub. Oh and I also tossed the veggies in veg oil and seasoning salt prior to putting them in the roasting pan. I cut up the potatoes into small pieces. Cooked for 1 1/2 hours at 325 then uncovered and cooked another 30 minutes at 375. My 4 lb bird was done to perfection and the veggies were perfectly seasoned and done through. Thank you for the recipe!

Cranberry Orange Cookies

Reviewed: Dec. 11, 2011
These were very good...took everyone's advice and added 1/2 cup more flour plus 1/2 tsp almond extract along with the egg. I also reduced the amount of white sugar from 1 cup to 3/4. Used slivered almonds for the nuts, but will probably use toasted walnuts or pecans next time I make them for more flavor - and there will definitely be a next time! Good recipe!!! Adding it to my Christmas cookie arsenal! :)
