Wow. I just made this and I am eating a bowl right now. It is amazing! I doubled the recipe and didn't stray very far, except I used canned diced tomatoes and some italian seasoning in place of the stewed because I didn't have them on hand. I used 1 can each of Northern and Pinto beans, and I cooked and added some farfalle pasta at the end when I added the spinach. Otherwise followed it exactly. I can see how you can improvise like crazy with this wonderful recipe. Thank you, Sallyjun! I am so glad I doubled it, because I'm sure leftovers will be even better!
