Vegan Agave Cornbread Muffins

Reviewed: Jun. 4, 2012
GREAT cornbread! Everyone loved it! Very moist. It was a tad sweet for me, so I will use just a little bit less agave next time.

Baked Chicken Nuggets

Reviewed: Feb. 21, 2012
Great Recipe! Very tasty, I like them along with my 2 year old. Instead of coating with butter I use egg and it works just as well. Freezes well and still juicy after a minute or so in the microwave.

Butterscotch Oatmeal

Reviewed: Feb. 9, 2012
This is pretty good. I never thought to put an egg in the oatmeal. A nice added boost of protein! I use about 1/4 cup brown sugar and then sweeten with raisins or cut up peaches. Very creamy and filling!

Easy Garlic Broiled Chicken

Great taste, simple and fast! My 2 year old loved it as did I! I didn't have parsely so I used basil. It would be awsome with the parsley but you cant go wrong.

Green Slime Smoothie

Great recipe! I added mango and OJ to make it tropical and added applesauce instead of honey. I also added in some flax. My 2 year old loved it!!! Great way to sneak in some veggies.

Brown Sugar Meatloaf

Reviewed: Jan. 2, 2012
Very good base, but I made a few changes. I used lean ground turkey. I omitted the crackers and put two slices of bread at bottom of pan. I added chopped carrots with the onion. I also added worsetschire to ketchup and brown sugar mixture that I put on top of the loaf, and in the meat mixture. I think next time I could cut the brown sugar in half. A little bit too sweet for me even with the changes. It is called brown sugar meatloaf, but I like to follow the recipe the first time and make changes according to preference. This will be a go to recipe with those few small tweaks.

Seafood Fettuccine

Reviewed: Jan. 2, 2012
Very good start for this recipe. I used a little more butter spread and substituted the scallops for a 16 oz can of crab. I also used precooked shrimp to save time. I did have to add the cornstarch to thicken, but still very tasty and gave me a fix without ALL the calories that come with normal alfredo! Very good flavor. Thanks for sharing!

My Crab Cakes

Reviewed: Jan. 2, 2012
Followed this almost to the T except I only used 3 green onions since it was all I had. 6 would have been perfect! I used panko and instead of dry mustard I used real mustard. Very moist and flakey. I like to make them more round then flat as it makes them easier to turn without falling apart. Rivals some I have had in restaurants. I also made a garlic aioli that went perfect. Next time I will try and mango salsa. Yum!

Caesar Salad Supreme

Reviewed: Jan. 2, 2012
Perfect flavor. I like a more fishy than garlicy dressing and this is it. I used the anchovy fillets instead of the paste. I also put it in the blender on the food processor and it got the garlic and anchovy pieces even finer. I used regular mayonnaise since it was NYE (live a little!), but plan on making a lighter version with some low fat mayo.

Actually Delicious Turkey Burgers

Great flavor. Didn't have parsley, but that would have been amazing. I also added chopped onion and carrot I had leftover from another recipe. It was great!
