Beef and Bean Chimichangas

Wow'd the entire family. Twice I made enchiladas using this recipe AND helpful suggestions along with my own. CHANGES: 1. Substituted an orange bell pepper for the green pepper. Adds color and flavor. 2. Added 7oz green chili peppers. 3. Substituted enchilada sauce for the taco sauce, chili power, garlic and cumin. 4. Served with guacamole, sour cream and extra shredded cheese on the side. This was a huge hit with 4 teenagers and myself. It's probably not fair to rate this recipe because I altered it too much, but the kids were impressed and ask for these enchiladas regularly. Thank you to the community for sharing!

Pork Marinade

Bored with the same old pork? This is a must try marinade. When you eat this, you get a nice sweet (but not too sweet) flavor followed by the actual pork itself. Finally, a kick of heat pops in at the end. As other reviews suggested, you can substitute regular mustard for dry and use the hot sauce of your choice in lieu of chile sauce. I selected Cholula Original Hot Sauce and marinated over night. Everyone from our 8 year old son to my 60 year old parents devoured their meals. We served it with seasoned brown rice and snap peas. Apple Snicker Salad

This sweet Apple salad has been a kid and family favorite for years. I strongly advise using vanilla pudding mix and fold in a can of drained crushed pineapple. The pineapple puts this over the top. Great recipe. Thank you for sharing.

Sloppy Joes II

Great base recipe. Tweaked by adding a splash of sweet baby ray's BBQ sauce in lieu of the brown sugar. Don't add both sugar and BBQ sauce or it will be too sweet. Also substituted red & orange bell pepper for green. The flavor of the gourmet peppers compliment the recipe better.

Sloppy Joes

WAY too sweet as is. sloppy joe II recipe is a much better base. try that recipe with a splash of BBQ sauce in lieu of the brown sugar. Adding both sugar & BBQ sauce over powers the other flavors. Personal preference, I like using Red or Orange Bell Pepper over the Green bell pepper. The colored pepper compliments this dish better.

Fluffy Scrambled Eggs

Easy to make. Eggs turn out light and fluffy. Kids devoured them. Add any of your omelet favorites like green and red bell pepper for color and flavor.

Apple Crisp II

Wow! There are recipes you look for hoping to find that forgotten awesome dish you remember as a kid. This actually tasted better than what I was wishing for. It tastes better a day or two after you make it as the apples are marinated. Fantastic!
