Meatball Nirvana

I did tweak this recipie a bit. I knew 12 meatballs would only last about an hour in my house and I wanted some for the freezer. I added 1 lb. of italian sausage and 1 lb of veal. I read an article where it said that a good meatball contained all three meats. I also took another reviewers suggestion and used riccotta instead of milk. I trippled all of the spices and cheese and cooked for 20 minutes. These are the bomb and I will make them again!

Megan's Granola

Loved this recipe! I did use coconut oil instead of vegetable oil, I used agave instead of syrup because that is what I had on hand and I did not put the brown sugar in because I got distracted when I was making it and forgot. It will burn quick if you don' keep a close eye on it. Now that I have made my first batch, next time I may add coconut or different nuts. Lots of opportunity for mix and match. Others have noted that the cost of ingredients is high which is true but if you compare to a gourmet brand of granola like Bare Naked, you still come out ahead. Super yummy when mixed with yogurt. 5 stars!

Quinoa and Black Beans

This was good. I added chicken and squash and it made a meal for my meat loving family. I like the fact that you can use the basic recipe and switch it up to meet your needs. Will make again!

Boilermaker Tailgate Chili

This was a great recipe that you can tweak to use what you have in the kitchen. I used 1 lb. of deer meat, 1 lb. of veal and 1 lb. of Italian sausage. I used smoked paprika and two tbl. of the chili powder and 2 tbl of chipotle pepper powder instead of all chili powder. Like others, I sautéed the veggies in the bacon grease and added extra bacon. Also, I only used 3 cans of beans. Next time, I think I will use stew meat and Italian sausage....assuming I have it on hand :) Overall, great recipe!

Slow Cooker Mashed Potatoes

These were good. You may want to make them a little creamier than you normally would. Mine dried out just a tid bit when in the crockpot and a little more when reheated the next day. Easy with good flavor though and this recipe makes a lot of taters!

Sorry, can only give this a 3 star rating. Fixed as others did with the evaporated milk and in one pot but had to add almost 3x the spice to get it to taste anything but bland.

Beef Pot Roast

Sorry, I have to be one of the few that give this a low rating. I read all of the good reviews so I decided to put it on the Thanksgiving menu instead of turkey. I followed the directions to the letter and my roast was like shoe leather and dry as a bone. Back to the crock pot for me :(
