To Die For Blueberry Muffins

Way too much salt and baking powder for a pastry. If I make again, will cut salt to 1/4 ts and baking powder to 1 1/2 ts. Muffins are supposed to be a little denser than say a cupcake. Had trouble getting out of pan, they tended to fall apart.

Very Best Blueberry Cobbler!

This recipe had some serious problems for me. I used frozen blueberries and the 1/2 teaspoon of flour which needs to be increased as the sauce was watery, not thickened at all. I baked for the 25 minutes, tested and baked an additional 10 minutes. When I went to serve it, the batter was still like raw dough at the bottom.

Pumpkin Cake I

I found it necessary to increase sugar to 1 cup. It could have used a little more spice. But more importantly, it could not be removed from the pan. An ingredient may be missing, maybe a little flour, to make it stiffer so it could be served in squares, rather than as a lump on the plate.

Maraschino Cherry Pound Cake

Like another, I cheated and used a boxed pound cake mix. Could not find butternut extract so I substituted 1 ts of vanilla and 1 ts of almond extract. This was absolutely delicious! Would make the original recipe if I needed a large number of servings.

Canadian Honey Apple Walnut Cobbler

This recipe was too dry for my tastes. I am more accustomed to cobblers where the fruit filling includes sugar and makes a saucy fruit base. The overall result of this recipe is more like a coffee cake.
