Tzatziki Sauce I

Fantastic tzatziki! Been looking for a good recipe, and I did add minced cucumber, drained of water, and drained the yogurt as suggested. Just as good as any Greek restaurant I've been to.

Pork Chop and Feta Skillet

Ehh, it was okay. I love feta and the combo was pretty good with the pork chop, but I wasn't blown away. It will be one of those "if that's all you have left in the refrigerator" recipies for me.

Chicken Enchiladas I

I enjoyed this filling for enchiladas. I omitted the water as suggested and used salsa instead of tomato sauce. I used corn tortillas to wrap. Very enjoyable!

Sauteed Apples

Very tasty. I may not use cornstarch next time as the sauce was a little thick for my taste, but these apples were great with ice cream and on pancakes the next morning!

Cumin Chicken With Apples

I really liked the flavor of this dish. I think it would be great using pork chops as well. The sauce was a bit thick for me, more like a gravy, so I'll probably thin it out a bit next time.

Grilled Portobello Mushrooms

I enjoyed these as a main meatless course. I used jarred roasted red and yellow peppers and a little sauteed onion in place of the onion powder. I don't have a grill, so I followed suggestions and baked at 350 for 20 minutes. I melted a slice of provolone on top of each cap right at the end of cooking time. That made them better, maybe 4 star.

Baked Stuffed Pears

Very good. The lemon was nice, but orange may have been good, too. I will try it next time. Also, I think it would be fabulous paired with vanilla ice cream, of which I had none. Again, next time!

California Grilled Veggie Sandwich

Simple and delicious. Used ciabatta bread instead of foccacia. A very easy recipe to customize and make to your liking. I fed it to my veggie wary boyfriend, and now he always requests me to make it!

Key Lime Pie VIII

Very simple to make, and very tasty. I used bottled lime juice and about half the required zest for time. Nevertheless, there was ample lime flavor and the pie was very good.

Skillet Chops with Mushroom Gravy

I thought this was an excellent dish! I used cream of mushroom with roasted garlic and it added a great kick! Since I love sour cream, I may add some next time, but that gravy tasted great on mashed potatoes!

Irish Chicken and Dumplings

I made this recipe for my cousin and her boyfriend, and they loved it. I ended up having to add about a cup of a flour/water mixture to increase and thicken the soup. I added mushrooms with the peas. I used refrigerated biscuits torn up for the dumplings (they were great!) I chopped up the onion and potato smaller than quartered, but I may want them smaller still, and although I like onions, maybe just one big one would be plenty. I think I will skip the peas next time--I'm not a fan. Otherwise, it was a great cold and rainy day dish!

Dark Chocolate Cake I

This cake was okay. it was moist, but a little spongey for me. Not very chocolatey. The cream cheese icing I used made the cake better. I could find better cake, however, in a bakery.

Incredibly Delicious Italian Cream Cake

I made this for my boyfriend's Italian mother, and she complimented it as the "best cake." My boyfriend kept stalling on trying it because of the coconut, but he finally did and raved about how good it was! Great recipe!

Beef Tips and Noodles

Used diced fresh mushrooms and about 1/4 onion, diced (both sauteed in butter) in lieu of canned mushrooms. Used double the canned soup and double soup mix (one pkg of mix would be sufficient, it was a little salty for my taste). Used about 3/4 cup water and 1/4 cup sour cream. Great leftovers! Will make again.
