Broiled Tilapia Parmesan

Family-friendly fish! Even my kids ate it. My only concern is that it was a little high in fat -- I cut back a little on the butter and used light mayonnaise and it was still delicious. Also made it once using dill and garlic salt in place of the other seasonings. Will definitely try it on other types of fish, as well.

Winter Fruit Salad with Lemon Poppyseed Dressing

Great twist on the ordinary salad. The dressing is the key -- I have been using it all week and experimenting. It works well on stronger flavored greens such as arugula and was also delicious over a salad topped with grapes and grilled chicken.

Suki's Spinach and Feta Pasta

Delicious combination of flavors. I used reduced-fat feta, and it didn't melt really well, but the flavors still blended nicely. We are on a low-carb diet, so we skipped the pasta and added a little turkey sausage.

Marinated Cheese

This was very beautiful, but looks aren't everything. I was a little disappointed that all those ingredients didn't deliver more interesting flavor. Probably won't make this again, too time consuming for just fair results.

Old Fashioned Molasses Cookies

Delicious, soft,not-too-sweet cookies. I have been searching for a recipe that replicates my grandmother's molasses cookies, and this is almost it. (Unfortunately Grandma never wrote anything down, and now she's gone!) I rolled the dough (which was a little too sticky, I had to add lots of flour when I rolled it out) thicker, to a 1/2 inch or so, so the cookies are more cake-like. Obviously had to cook longer. I may try the others on this website to see if their recipes are an even closer match to Grandma's, but these were very good.

Mini Meatloaves

I tried to double this recipe and it turned out very wet. I couldn't shape it into mini loaves but had to put it in two loaf pans. However, the flavor was very good. I used a mix of turkey, pork and beef, added a little garlic powder and onion, as someone suggested. I did not double the glaze and it was plenty for two loaves. I think I will try again.

Banana Banana Bread

I used 1 1/4 cups white flour and 3/4 cup whole wheat flour to make a little more healthy, and turned out great. Not overly sweet, but I like that -- with all those bananas and the whole wheat flour, I didn't feel guilty letting my kids gobble up seconds at breakfast! I agree that a little vanilla and cinnamon may perk it up a little, but overall, it was delicious.

Pasta, Broccoli and Chicken

Good, but I was expecting a little more flavor. I increased the pesto to 3 tbsp. but it could have used 4 or more. Also, I would have liked more tomatoes. Black olives or red onion might have zipped it up a little more...May try again with some of these alterations.

Iced Pumpkin Cookies

Soft, muffin-y cookie. Would like a bit more spice next time so I will increase the cinnamin and maybe put in some ginger. Also, raisins and/or walnuts would be great. The glaze was a hit with the kids (although I halved that part of the recipe and it was plenty).

Cranberry Chutney I

Nothing all that special, a little disappointing considering all the rave reviews. Not sweet enough for me -- I used Granny Smith apples which are tart, so that probably didn't help. Cut back to 2T balsamic, as recommended in some reviews, didn't taste vinegar-y at all. I had to put in a couple Tablespoons of brown sugar to sweeten it up, then it was pretty good.

Berry Trifle

Great with fresh berries -- I took the basics of this recipe and changed according to what looked good in the store. I sliced fresh strawberries, added a little sugar and let them sit for a couple hours to get juicy. I made the trifle the night before so the cake absorbed some of the juice. I even made a mistake and added all the cool whip at once, and it turned out fine.

Chicken and Spinach Alfredo Lasagna

Delicious, even though I lightened it up a bit -- used 1 cup whole milk, 2 cups cream, lowfat cottage cheese instead of ricotta, and lowfat soup. ALso used 4 chicken breasts instead of the whole chicken and frozen spinach -- this cut down prep time. May try fat free half and half next time and cut out cream entirely.

Absolute Mexican Cornbread

Wow, where did I go wrong?? This was tasty, but the texture was more like a dense corn pudding. It turned a light golden brown, but didn't look like bread. I reviewed the recipe and I don't think I messed up any of the measurements, so I can't quite figure this out. Won't try again.

Tequila Cocktail Sauce

I sized this to serve 10, and then went a little easy on the horseradish due to personal preference. Tasty, but I also might try just adding a splash of lemon or lime and tequila to bought cocktail sauce just to make a quicker version.

Santa Fe Rice Salad

Overall a nice basic recipe. When I make again I will make a few adjustments. I used a fresh jalapeno, removing the seeds, which didn't provide enough zing to the dressing. Next time will use the prepared jalapeno and maybe add some cumin or cilantro to pep up the dressing. I used white vinegar which was a little strong for my taste. I will either cut down on the amount or use rice vinegar for a lighter taste. Also, needed some crunch, so chopped bell pepper or even celery would be a good addition. And cheese is kind of unnecessary, added calories but not much taste...

Hershey's ® Chocolate Mousse

Is there such a thing as too rich? Maybe this is it... It was delicious but they are not kidding when they say this serves four. I doubled because I thought a 1/2 cup portion of mousse would look skimpy in the serving dish. But, any more than that goes uneaten...

Chocolate Cakes with Liquid Centers

Flavor on these was very good, but be very careful with your baking, these are tempermental little cakes. Mine were a mess, presentation-wise. I prepared ahead and refrigerated for a few hours, put them on the counter while the oven preheated (20 minutes or so) and then baked. I knew they would take longer to cook, but the big problem was that the tops started to burn and the inside was still totally uncooked. I tried to unmold one and it just poured out of the ramekin. Ended up eating out of the dish...Will probably try again, but will adjust cook temp/time...

Peach Upside Down Cake I

This was OK, the cake part was a little bland, maybe some vanilla or almond extract would make it a little more interesting. The presentation leaves a bit to be desired - I think I would slice peaches and maybe do a spiral design in a round pan if I tried this again, The peach halves just looked like big hunks.
