Quick and Almost-Professional Buttercream Icing

Reviewed: Mar. 3, 2012
I must first say that I do not like frosting. At all. But I'm making cupcakes for a bridal shower coming up and I thought I'd give this a whirl. It was very very easy. I used the KitchenAid instead of gently stirring with a spoon. I also only had salted butter in the house. I added a little extra milk (I used skim) and added some chocolate syrup and cocoa and it came out terrific. For someone who doesn't like frosting, this was pretty darn good. ... Don't use salted butter!

Caramel Popcorn

Reviewed: Dec. 24, 2012
I made this for my family's Thanksgiving. I also made kettle corn and cookies and so on and so forth. The Caramel Popcorn was gone SO fast! It was a great munchie before dinner and a great desert snack instead of eating heavy pieces of pie after dinner. The timing I used was a little different. I boiled on med-low heat, stirring constantly. I was also taught a different method to tell how it's done. Have a bowl of cold water ready next to you at the stove and drizzle a little caramel in the cold water. If it sinks and is still soft, keep boiling (and stirring constantly.) If its instantly hard (not "kinda" hard) and floats, you're done! I also tried this with and without the baking soda and I liked it a LOT more without the baking soda. Much better color and consistency without it.

Mom's Rum Cake

Reviewed: Dec. 15, 2011
I bought 1.5 oz pudding mixes because I didn't have this recipe on me to know what size so I just bought a bunch of the small ones. So I used two small packages of pudding (3 oz total) and even that was WAY too much. The batter is So thick! I was making a bunch of mini Rum Cakes so I wasn't planning on turning them upside down. Now I have to because the batter was so thick that the tops are ugly. No word on the taste yet. I'm sure they'll taste fine. But presentation was key for me this time because I was planning on giving them to co-workers as gifts for Christmas. LESS PUDDING! I'd make more with less pudding but "The Rum's Gone!" Planning on maybe cutting off the tops and turning them upside down? But I don't have pretty paper plates to give them out on... I'll figure something out.
