Ham and Swiss Casserole

My husband really liked this, although I think he'd eat anything containing ham & Swiss cheese! I did not alter this recipe, which is unusual for me, but I didn't feel it was missing anything! Thanks!

Pizza Crust Fantastico

Very good pizza crust, but needed a little tweaking. I added more wheat flour, used wheat germ instead of corn flour and reduced the pepper. But the pizzas turned out great, the crust is flavorful but not overpowering. Also excellent when spread with pesto instead of a tomato-based sauce.

Mediterranean Medley Salad

Excellent! Veggies I used were green & red peppers, asparagus, cherry tomatoes, red onion, mushrooms, canned artichokes and a variety of olives. I also doubled the dressing. Best if marinated overnight.

Yummy Pork Chops

Corn Casserole I

I have made this same recipe many times before (obtained from a co-worker) but never before with the peppers & onions. I used jalapenos instead of green chiles, added a dash of cayenne and it was so good! I made a pan with spicy and one without for a family party and the hot one was gone! Thanks!

Twelve Minute Pasta Toss

Made this one twice, once with chicken, once with ham (left out salt.) This was really good! I used the oil from the tomatoes instead of plain olive oil. I also sauteed in a dash of crushed red pepper, sliced black olives and fresh mushrooms, may add some green pepper or zucchini next time. Thanks!

Just like Mom used to make! Well, she still does, too.... I don't pre-cook the meat, though. I have also stuffed tomatoes in the same pan for my brother who doesn't like peppers.

Armadillo Eggs

These were a huge hit at the last Super Bowl party! We loved them, I had tons of requests for the recipe and I've been told I have to bring them every year! I used jarred jalapenos and hot sausage, they were even hotter the next day. Stuffing the peppers is time consuming and I will wear gloves next time as my hands burned after making a double-batch, but the response was worth it! I served these with a jalapeno-ranch dressing (will post the recipe soon. Thanks for sharing a great recipe!

My husband discovered this recipe and it turned out really great on boneless, skinless chicken breasts. I used white cooking wine so it was a bit salty and used 1 tablespoon dried cilantro. A keeper!

This one is a regular meal at our house now. I often make my own balsamic dressing, mix & match veggies including onion and bell pepper, and use different cheeses at times. Yummy!

Wine and Dijon Marinated Pork Loin

I really liked this one! I have made it with or without the yogurt, didn't make much difference. I have also ommited the oregano & basil and just used thyme, I prefer it that way. Overall a really good recipe.

Alyson's Broccoli Salad

I have made this for my diabetic mother, but the whole family also loved it! Made a couple changes, used golden raisins AND dried cranberries, Splenda instead of sugar, added halved red seedless grapes, 1/2 cup finely shredded cheddar cheese, and added some chopped green onion I needed to use up. Very colorful and this is a great recipe for the Holidays, a nice alternative from all the heavy casseroles my family makes!

Garlic Top Sirloin Pot Roast

Left out the green peppers, I'm not a fan of them, used less potatoes & more carrots. I've made this several times and usually omit the water and substitute beer or red wine, whatever I have on hand. Tucking the garlic slivers into the meat is a MUST, it really makes this recipe! Thanks!

Chicken and Bacon Shish Kabobs

Great recipe! We ended up needing more bacon and pineapple. I didn't have any green onion on hand, so I added some minced garlic instead. Also marinated the bacon & pineapple, and some yellow onion too. My husband and I both loved it! Will make this one again, thanks!!
