Stuffed Guinea Squash (Eggplant)

Made this last night and we LOVED it. I altered it a bit, so I can only give 4 stars. I added 1 T each parsley and lemon juice, reduced the bread crumbs and added half a chopped bell pepper. I pre-baked the eggplant shells 10 minutes. I covered the stuffed eggplant with foil for the first part of the baking and did not add the cheese on top until the last 10 minutes, baking uncovered.

Grilled Veggie-Portobello Mushroom Burgers

This one is a regular meal at our house now. I often make my own balsamic dressing, mix & match veggies including onion and bell pepper, and use different cheeses at times. Yummy!

Vegetarian Mushroom-Walnut Meatloaf

I added shredded carrots and more Worcestershire sauce, but I really liked this recipe. My husband was less impressed, but he ate it for dinner. Oh well, more leftovers for me! Thanks!

Pasta Salad with Homemade Dressing

Skipped the pepperoni, chopped the cucumbers and added tomatoes. Used all fresh herbs from my garden instead of dried. This was very pretty and very tasty!

Pizza Crust Fantastico

Very good pizza crust, but needed a little tweaking. I added more wheat flour, used wheat germ instead of corn flour and reduced the pepper. But the pizzas turned out great, the crust is flavorful but not overpowering. Also excellent when spread with pesto instead of a tomato-based sauce.

Cameroonian Fried Spinach

Only 4 stars since I added to it: I used fresh garlic, added a tsp or so of lemon juice, a dash of crushed red pepper and a dash or two of Worcestershire sauce to jazz it up. It was very good. My husband wrinkled up his nose at it until he tasted it, he thought he only liked canned spinach. He had seconds.

Mediterranean Medley Salad

Excellent! Veggies I used were green & red peppers, asparagus, cherry tomatoes, red onion, mushrooms, canned artichokes and a variety of olives. I also doubled the dressing. Best if marinated overnight.

The Best Slow Cooker Cream Corn

Yummy, but rich after a few bites, not something I can eat all of the time! Very tasty, but I followed other reviewers' suggestions and reduced the cream cheese and the sugar by half.

Garlic Top Sirloin Pot Roast

Left out the green peppers, I'm not a fan of them, used less potatoes & more carrots. I've made this several times and usually omit the water and substitute beer or red wine, whatever I have on hand. Tucking the garlic slivers into the meat is a MUST, it really makes this recipe! Thanks!

Wine and Dijon Marinated Pork Loin

I really liked this one! I have made it with or without the yogurt, didn't make much difference. I have also ommited the oregano & basil and just used thyme, I prefer it that way. Overall a really good recipe.

Big Al's K.C. Bar-B-Q Sauce

Very tasty sauce! I didn't have molasses, but since I am diabetic I really didn't miss the extra sweetness! Also used fresh garlic, onion and celery instead of the powders called for. Thanks!

Corn Casserole I

I have made this same recipe many times before (obtained from a co-worker) but never before with the peppers & onions. I used jalapenos instead of green chiles, added a dash of cayenne and it was so good! I made a pan with spicy and one without for a family party and the hot one was gone! Thanks!

Twelve Minute Pasta Toss

Made this one twice, once with chicken, once with ham (left out salt.) This was really good! I used the oil from the tomatoes instead of plain olive oil. I also sauteed in a dash of crushed red pepper, sliced black olives and fresh mushrooms, may add some green pepper or zucchini next time. Thanks!

Alyson's Broccoli Salad

I have made this for my diabetic mother, but the whole family also loved it! Made a couple changes, used golden raisins AND dried cranberries, Splenda instead of sugar, added halved red seedless grapes, 1/2 cup finely shredded cheddar cheese, and added some chopped green onion I needed to use up. Very colorful and this is a great recipe for the Holidays, a nice alternative from all the heavy casseroles my family makes!
