Tofu Parmigiana

This was an easy recipe to make. It was good and I would probably make it again. The only problem I had was getting the breadcrumbs to stick to the tofu as I was frying them.

Creamy Mushroom Risotto

This turned out great with a few alterations. First, I didn't use the water and the cream of mushroom soup as a previous reviewer stated it turned out gloppy. Second, I used 8 ounces of fresh sliced white button mushrooms. Third, I substituted mushroom broth for the chicken. So, I just skipped the 1st two steps and cooked the mushrooms until they were soft.

Four apples is way too much, one or two apples would have been fine. These turned out a bit too doughy and came apart. I would not make this again.

Apple Crumble Pie

I made this for Thanksgiving and the apples needed longer to cook. They were still a bit crunchy. The crumble was very good, tasted like shortbread.

Raspberry Oatmeal Bars

These were okay. I used butter instead of margarine and you need a bit more than 3/4 cup to get all the cake mix coated. They didn't stay together very well, maybe because I used butter.

Tuna Noodle Casserole from Scratch

I've made this twice. The first time I followed the directions. The second time I did not add bread crumbs, cheese, or bake it. I felt baking it dried the sauce. I was great just straight off the stove top.

Ramen Noodle Salad

This really made a lot and the noodles stuck together big time! The recipe calls for four noodle packages, but it doesn't state how much seasoning mix is to be used as there is a packet for each package.

Restaurant-Style Spinach Casserole

Very good, but it's more like a dip or a variation of creamed spinach. You really don't need butter and flour, the cream soup makes it thick enough. I ended up adding some milk to thin it out a bit. I also substituted with scallions and cream of mushroom soup.
