Fiesta Fry Pan Dinner

Very tasty! perfect dish for zucchini. I was trying to use up supplies I had on hand so I used Rotel and a little salsa in place of the stewed tomatoes. That gave it the kick it needed without any additional spices.

Waistline-Friendly Turkey Chili

Very GOOD chili. I used all green pepper and it was still very colorful. I think the bbq sauce is a key ingredient and I used Sweet Baby Rays--Hioney chipotle. Yum! As others have said it is VERY spicy and if you don't like sour cream in your chili you may want to decrease the red pepper flakes.

Shrimp Avocado Pasta Salad

Tasty Pasta salad....I did not serve over lettuce. The crushed red pepper gives it just enough zip with the plain mayo base so all the other flavors come through...Hubby really like it. Suggestions: Don't forget to salt you pasta water Put the avocados in the lemon juice called for in the recipe and they won't turn brown.

Drunken Roasted Salsa

Good Flavor. I will tweek it a little next time to accomodate my own personal tastes. Less cilantro, a little less beer (gets runny) and a little more salt and lime juice. I used a variety of peppers and it was pretty HOT. Make sure the peppers are charred so the skin comes off easily. Addictive.

Pizza Salad II

Decent. I thought there wasn't a balance between the pasta and the other ingredients(too much pasta). I even used 5 oz of pepperoni and next time I will use less pasta and up a few of the other ingredients. Nothing spectacular but good flavors!

Spaghetti with Garlic and Basil

Really quick and yummy! I used angel hair pasta and served Bruschetta with it...season generously and the parmesan is a MUST otherwise would be a little bland.

Slow Cooker Chicken and Dumplings

Tasty....didn't have onion so seasoned chicken with onion powder and some black pepper. Added 2 stalks celery and 1/2 c carrots to soup mixture and 1 c frozen peas right before adding bicuits. Used 1 can low sodium chicken broth instead of water. Did add only 1 can bicuits and after an hour they were still doughy so removed my crock to oven for about 15 min to finish cooking and brown top. Would make again.

Burgundy Pork Tenderloin

Save the Burgundy for BEEF! This didn't taste bad just "different". --Seaoning on the meat=excellant --Per other reviews used 1 c. Burgundy 1 c. Beef broth final result tasted to "beefy" next time would use ALL wine --Omited celery used mushrooms instead...onion added no flavor and mushrooms were rubbery if used again would saute slightly first and make sure they were covered with wine when baking. --Brown gravy/wine sauce was actually very tasty itself.

Chicken Garlic Pizza

This smelled so yummy while baking I didn't even care if it tasted good but it did! The Pillsbury pizza crust makes a rectangle cookie sheet so I would definitely increase the amount of garlic/butter combo...next time I would also probably season my chicken. Was a little skeptical about the ricotta but I was pleasantly surprised. Just like a gourmet pizza!

Mexican Lasagna Chip Dip

If you want "kick" use jalepenos instead of chiles. I agree with others bean/beef was bland needed some taco seasoning or something. Liked the cream cheese I used 1 8oz plus 3 oz and that was plenty. Not a keeper for me I much prefer the Clemons Family Bean Dip (on this site).

Fried Steak with Peppercorn Gravy Sauce

Not really what I expected....the peppercorns didn't give the gravy much flavor. If I made again I would omit peppercorns and vinegar and maybe add some mushrooms.

Beer Pizza

Would not be a Pizza I would "crave" but was tasty. It is not necessary to use oil to cook bacon and pepperoni....they make plenty of "grease" to cook onions/peppers in may even drain before adding to tomato sauce.

Mushroom in the Middle Meatloaf

Easy and really liked the flavor with the sausage/onion/green pepper. If you're not big on sausage use 1 1/2 lb beef and 1/2 lb pork. Did have to add 30 min to cook time probably because of the pork. Wasn't able to "roll" up and seal good so I had mushroom all over not just in the middle! IF I make again I may just mix soup into meat mixture.

Diego's Special Beef Stew

This was easy and very good! Don't let the description that says a LOT of onion scare you...it is not at all overpowering. The only thing I expected to be different was the consistency...I thought it would be Thicker so maybe next time I can remedy that by adding less liquid. Ate it over cornbread and was very tasty and filling.

Sensational Steak Sandwich

Very easy and was yummy! I will make a few changes next time I make this one. I like horserasdish and brown mustard and I did cut down amt of each to 1/4 c (should have plenty if use 3 Tbsp each) but taste does not go well with this recipe in my opinion...also made bread a little soggy. Wine added some flavor but not necessary for recipe to turn out well. I also put steak in freezer for about an hour and was much easier to get thin slices. Will make again but only butter and toast the bread.

Super Sausage Gravy

This is pretty much how I make my gravy...and it always turs out delicious. I only use 3 TBSP flour and sometimes I will ues 3 cups milk to make it stretch a little further.

Seafood Pasta Salad

Just like seafood salad should taste. I used Medium seashell pasta. Definitely double dressing and add 2nd half just before serving for a creamy salad. (remember don't over cook pasta as it will absorb even more of dressing and make salad dry).
