Delicious Gluten-Free Pancakes

Best GF pancake recipe ever! I got tired of spending a fortune on mixes, and now ground my own flour. I make a big batch of this flour and leave it in a canister so I can whip up pancakes quick. For a lower fat option I cut the oil to 1 tbsp and mash up a banana. I've also used coconut milk (Silk coconut milk in the carton, not the canned kind) instead of the water and it's so creamy and delicious! You can freeze these and they re-heat without becoming crumbly and falling apart. This is the only pancake recipe we use!

Chocolate Chip Cookies (Gluten Free)

These are like little cookie cakes from heaven! Both my son and I are gluten free, and we haven't had a decent chocolate chip cookie in forever. I've tried numerous recipes with no luck, and all the pre-packaged stuff you buy tastes awful. I made a few substitutions because I needed something quick to bring for a birthday party and didn't have any butter on hand. I replaced the butter with 1 cup of fat free vanilla yogurt, used 2 eggs, and only used 1 cup brown sugar and no white sugar (since the yogurt was already sweet). I also added 1 tsp xanthan gum. It made a batch of 28 cookies. I am making these again FOR SURE!

Gluten-Free White Bread for Bread Machines

WE HAVE A WINNER! This recipe is great! I've been buying a bread mix off Amazon for the past year, but I like the way this turned out a lot better. I still might try some modifications for my own tastes, but my son LOVES this bread so that's all that matters.

Creme Brulee French Toast

This is so delicious. I made it for the first time for a mother's day brunch. I tripled the recipe and it was gone so fast! I recently made it for a christmas gathering. I only had 1 cup of half & half so I added 1/2 cup of creme brule liquor and it turned out wonderfully!

Too Much Chocolate Cake

This is the best chocolate cake I've ever had! It was gone in a flash and everyone wanted the recipe. I also used fat free pudding mix, fat free sour cream and cut half the oil with apple sauce and no one knew any different. It was so delicious! Made it with the satiny chocolate glaze and topped with fresh strawberries. A big hit! I will be making this one again in the future.

Jay's Jerk Chicken

This is the best chicken recipe I've found in a long time. Made it for a tropical themed baby shower and everyone raved about the chicken. Was even told it was better than eating at a fancy restaurant! I'm going to make this chicken every week. It's sooooooo good! I was worried about it being too spicy for my pregnant friend so I cut the jalapenos by half, but it wasn't spicy at all, so I think next time I might add a few extra.

Baked Teriyaki Chicken

This recipe has become a favorite in our house, plus I've passed it on to all our friends. Some of our friends run board and care homes, and their residents request this dish often! It's so tasty and healthy too, and simple to make. I substitute splenda for the sugar, and no one even notices.

Spicy Garlic and Pepper Shrimp

This is a quick and easy recipe, and it tastes wonderful! I used about half the oil and it still tastes great, plus it's a lot healthier. Will make this one again and again.
