Breakfast Pizza

This recipe is one I've been using since I saw it in the Taste of Home magazine a few years ago. Make sure to drain or blot the sausage so it's not too greasy. A popular favorite with an early morning church group I used to teach.

Deep Dish Brownies

Hmmm! Death by chocolate when I added Guittard chocolate chips to mix. I followed other reviewer's suggestions for a thick, fudgy brownie. When they were still warm, I wasn't too sure that this was the right recipe for us, but once the brownies were completely cool, wow!

Kettle Corn

This recipe is very hard to make without a whirly-pop style popcorn popper. I tried it just in a dutch oven, but the shaking just isn't enough to stop the bottom kernels from over-browning. I bought a Whirly-Pop, and what a difference. The secret also is to salt the kettle corn at the end so that you have that balance of sweet and salty.

Almond-Crusted Halibut Crystal Symphony

A symphony indeed! Every bite was heavenly. Even my kids who were skeptical at first oohed and aahed. The sauce makes the dish -- I tried not to think about the butter/fat content as it crossed my lips (then went straight to my hips). I didn't need to double the sauce because I only made three fillets instead of six.

Amy's Cilantro Cream Sauce

I made this to accompany the southwestern eggrolls on this site. When there were leftovers, we wanted to find anything we could to dip -- yum! Tastes best after the flavors have had time to blend. Thanks Amy!

I love the meatless concept, but my family prefers good old taco salad with the spiced hamburger and doritos. I would have given it four stars for being fairly healthy, but it was just okay.

Halibut Weaver

This is one of my husband's favorite halibut recipes. Funny reading other reviewer -- the first time we had this was at the Officer's Club at Eielson AFB, and we called to find out what it was called so I could make it at home. I sometimes use light mayo and add garlic or garlic powder. It's very rich (and halibut is expensive if you're not catching it in Alaska yourself)so it's more of a special occasion dish now.

Korean Barbequed Beef

Very tasty -- even my kids ate it up. Wrapped in bibb lettuce, it is fairly healthy and the sauce is delicious. I didn't have hot chile paste so I just left it out and it was still wonderful. Rainy day -- I cut the sirloin thinly, marinated then broiled it in the oven.

Angela's Oriental Chicken Noodle Soup

Easy and delicious! I used rotisserie chicken leftovers and canned, sliced carrots. Also added 1 tsp. soy sauce, snow peas and baby bok choy. Next time I'll use more bok choy or maybe try spinach. My kids ate it right up.

Shrimp Egg Salad

This just didn't do that much for either me or my hubby. It seemed like a waste of shrimp because we couldn't really taste it. We'll just stick with egg salad sans shrimp.

Potato Salmon Patties

Hmm - our family loves these, even the toddler. I never use canned salmon, though. Always wild salmon, either fresh or frozen, that I bake at 400 degrees until moist & flaky. It must be served with a sauce: I've used the Wine Sauce for Seafood recipe on this site and also a lemony aioli mayo.

D's Famous Salsa

Best salsa ever! It's fresh and has great depth. I used two cans of petite diced tomatoes (slightly drained) and diced one jalapeno pepper instead of the canned chiles. Instead of chips 'n salsa, it was salsa and anything we could find to dip in it. For best results, refrigerate overnight. Yum!

Chicken Enchiladas V

So simple and a great family night meal. I cooked the chicken along with onions and garlic. I also buy uncooked flour tortillas from Costco (refrigerated section) and brown them then add the chicken chili mixture. These enchiladas are very mild in flavor so if you like spicy you'll need to kick it up a notch. Only 4 stars because it's good and easy but not mind-blowing.

Seafood Stuffed Zucchini

This was a very simple, somewhat impressive dish. It didn't knock my socks off, but I think it has potential. Low in calories & fat, but the kids wouldn't touch it. The stuffing was moist and the seasonings all blended well. I also added a bit of cayenne to give it more punch.

Lemon Supreme Pie

Spectacular - fresh lemony zing mixed with sweet cream cheese layer. I didn't use any of the cream cheese mixture on top so I only used 8 oz. of cream cheese and cut back on whipped cream. Used less food coloring for more appetizing look. I am craving this pie now and look forward to making it for the holidays.

Pizza On The Grill I

I liked the concept of grilled pizza but wasn't crazy about this crust. My kids didn't like the plain tomato sauce either. Next time I try it, I will use a different crust and sauce. I think it needs to go under the broiler, but that just adds more work.

Jay's Signature Pizza Crust

Followed recipe exactly. It was so easy to roll out. I used it for two medium pizzas. My husband's first comment was how much he liked the crust. I gave it only 4 stars because next time I will blend in some flavoring and the crust needs to be baked for 8-10 minutes before topping. I pre-baked only one crust and it was perfect. The other unbaked one...not the crispy outside, chewy inside of the other one.

Slow Cooker Chicken Stroganoff

This was the most delicious dinner. I used frozen chicken breasts straight from the freezer to the pot and followed advice from other reviewers: Skipped the margarine, used half of 0.7 oz pkg Italian dressing mix (will use even less next time), 1 can Healthy Request Crm of Chicken soup and 1 can Healthy Request Crm of Mushrom soup thinned with about 3/4 c. milk. I let it cook for about five hours until it was moist and tender, falling apart. Shredded the chicken and then I added 4 oz. 1/3 less-fat cream cheese and about 1/2 c. of sour cream. I let it cook in the crockpot for another 45 minutes to let the flavors blend. Served it over whole wheat egg noodles and it was heavenly.
