Blueberry Zucchini Muffins

I love this recipe, followed it as directed except substituted plain greek yogurt for milk and used walnuts instead of pecans. I also had left over topping from my applecrisp (brown sugar, quick cook oats, butter and cinnamon and sprinkled in on the tops.

Ham and Cheese Breakfast Quiche

I also used bacon instead of ham, 1 additional egg, a touch bit more cream. I also added a little leftover chopped spinich that I had and it was delicious.

Pasta with Tomato and Bacon

This is a great alternative to the regular spaghetti sauce. Make sure you use a good cut of bacon to get that great smokie flavor. I really enjoyed it and it was a great way to use some of the fresh herbs from my garden.

Jay's Jerk Chicken

I used this recipe last nite to marinate chicken for kabobs. I cut the chicken up in small pieces and marinated overnight. I used it on kabobs with red peppers, mushrooms, and pearl onions and served them over rice. Boy did everyone love them. Great recipe.
