Sassy Chicken Enchilada Dip

Delicious! Every time I bring it someplace people comment about how good it is! I use the Rotel Extra Hot Tomatoes with Green Chiles. Nice thing is it's even better if made a day ahead of when you plan to eat it.

Salsa Cube Steaks

I used bottom round steaks instead of cubes and cooked them for an hour. As others suggested, added cheese after I took the foil off, and cooked for another minute to melt it. Delicious, easy to prepare and can be made at the same time you are using the oven for something else. Just reheat in the micro and it's still wonderful!

Cappuccino in a Jar

Chicken Salad II

My husband loved it! I did too! I halved the recipe for the two of us and it made a ton! Stuck some uncooked mushroom stems (sliced) in the second day and that was good too.

Restaurant-Style Coleslaw I

I used Splenda instead of the sugar and 1/4 c nonfat sour cream with 1/4 cup mayo instead of the 1/2 cup of mayo called for in the recipe. I shredded my own cabbage,carrots and onion for the mix part. This is the very best coleslaw dressing recipe I've found and I've been looking for a good one for 30 years! Thanks be to Marsha!!!!

Spicy Chipotle Turkey Burgers

Very good for a turkey burger. This had a nice spicy taste. I put all the ingredients except the cheese and buns together and mixed thoroughly about 5 hrs before making into patties and grilling. I think it helped add to the flavor. Used shredded sharp cheese on top since I didn't have any mozzarella handy.

Fiesta Dressing

I made this with the hot chiles and tomatoes. Delicious for a dipping sauce for vegetables. For the salad dressing though, I wouldn't drain the tomatoes and chiles and it wouldn't be quite so think.

Texas Chicken Quesadillas

Very good! I did all this ahead of time, then layered tortillas just 1/2 before eating. Popped into preheated oven and served with salsa. Yum! Oh, yeah, I didn't have flour tortillas so I used corn ones.

Thyme-Rubbed Steaks with Sauteed Mushrooms

I made this with a London Broil and it was delish! I just doubled the mushroom part of the recipe and used sliced portabellos and sliced white button. Very good!

Shrimp and Crab Enchiladas

I also coated each tortilla with lite cream cheese. I only got 10 8" tortillas out of this recipe, but that was plenty for a dinner for four. Very tasty! As another suggested, I cut the shrimp into pieces.

Mexican Lasagna I

This is an easy recipe that tastes very good. As others noted use only 1 cup of water instead of 2 as it says and the consistency is perfect. For my husband and I, next time I will add a can of jalapenos because we like spicier food.

Overnight Apple Cinnamon French Toast

Delicious! With a bit of alteration on my part. I used 4 big Granny Smith apples. Peeled and sliced thin put in a saute pan with 1/2 c. brown sugar,1 c water and saute covered, stirring when necessary. When apples are done, add 1 tsp cornstarch that's been mixed with a little water to the apple mixture. Cook until thickened like an apple pie would be. Had to used 21 slices of bread instead of 20 also. It was a big hit at Sunday morning golf! Some women said "very rich--but delicious" while some of the men said, " I'll have another piece and I can't eat another bite I'm so full!"

Green Salsa

I doubled the amount of tomatillas since I used canned ones and they aren't as big. Doubled the garlic for flavor. Didn't bother with the canned chiles because of the tomtillas. Used 6 fresh jalapenos leaving the seed in 3, but we like spicy! Very good. Use 2 habaneros with seeds removed for a similar hot salsa. Served it with baked chips and fresh veggies, Yum!
