Sweet and Spicy Nuts

This didn't melt well. Also I had to stir constantly or I would have had 2 cups of burned nuts! Next time I'd try adding a tsp or so of water to get the sugar to melt properly and it might be more like a glazed nut. Taste was good.

Hot and Spicy Pecans

Authentic Huevos Rancheros

Yum! Easy, easy, & fast. Microwaved beans while cooking the tortillas. Added some diced jalapenos over the beans before putting the egg on. We've had them for supper too!

Bacon and Egg Breakfast Tarts

Made this recipe in tartlets, so beat the eggs like you would for scrambled in with the milk,cheese,bacon, salt and pepper and then poured a bit into each tartlet. Very good. Cooked crusts 8 minutes, then with filling 10 min.

Cappuccino Tarts

I love the taste of cappuccino, but this was too coffee flavored and I only used 3 TBSP of coffee liquere. Next time I will try using less coffee crystals and I think it will be fine.

Pizza Salad I

Loved it! Used Romaine and omitted cheddar the 2nd time and it was still wonderful. Added pepperoni slices with shredded pizza cheese (instead of the mozzarella and cheddar cubes)another time. I think it's the dressing that's so good!

Portobello Mushroom Ravioli with Prawns

I also removed the prawns after they turned pink and put them back in at the end to warm them up. Sauce took longer to boil down than I expected because even the ravoli was done before the sauce--and I'm not that fast! Delicious flavor and I forgot the parmesan to begin with, so we got to taste with and without. Good both ways, but slightly better with the cheese. But four ravoli was okay for me--not for my husband. Plan on 6 for a bigger eater.

Chickpea Macaroni Salad

Very tasty! Added green olives stuffed with pimentos as well as the ripe ones. Probably ended up using more macaroni than a cup as well. But it's much better if you let it sit for more than 30 minutes. Try a few hours or overnight, but be sure to stir it up before you serve it.

Tomato Pie I

A winner! You might try using Roma tomatoes to cut down on the wateriness because they don't usually have as much as regular round tomatoes. Of course because they're not as big, you would need more, between 6 and 8 depending on size. Loved it cold the next day too!

Eastern North Carolina Barbeque Sauce

I made this sauce and let it sit for 24 hrs. Then I submerged a pork tenderloin in it for another 24 hrs in the refrigerator.I baked the pork with a small amount of sauce poured over it for 3 hrs at 325 degrees, covered, basting once an hr. Then I shredded the meat with 2 forks and poured the rest of the sauce over it, turned off the oven and when it was time to eat (about 1 1/2 hrs later)popped it on buns and ate heartily. Loved it! Nice & spicy!

Everyone loved the taste of this chicken , but it was NOT hot. Next time I will use a habanero or a few jalapenos. Let this sit overnight in the marinade.

Calypso Rice and Beans

Faster to open a can of black beans and rinse --rice needed to cook longer, but I had the time--used only a 6oz can of pineapple and after tasting added more jalapenos for us. Good and will make again using these adjustments.

Key West Chicken

I mixed this as the recipe says except I used a roaster instead of chicken breasts. I lifted the skin all over the bird, poured about 1/2 of the marinade under the skin. Let set in bag to marinate. Cooked on 450 for 20 min. then 350 for 1 1/2 hrs. Black but delicious and juicy!
