Carrot Soup 'a la Louise'

If you like cooked carrots, you will enjoy the flavor of this soup. I did as others suggested and pureed most of the carrots. Because of this it was so thick I did not have to use any cornstarch. I used fat free 1/2 and 1/2 and only 1 TBSP margarine to make it less fattening. I'll eat the entire recipe, too, because my husband loves raw carrots, but he doen't like them cooked!

Pasta Salad II

I used tortellini instead of rotini for some more flavor. I only used 8 oz. Cut the Italian dressing in half. Used 3 1/2 tsp Old Bay (it wasn't spicy enough when I halved the original recipe). Left other ingredients as recipe called for. Was still missing something, so I added some tomato cubes and some extra sharp cheese cubes. With my changes I'd rate it a 4 but as written a 3 is as high as I would give it.

Authentic Mexican Breakfast Tacos

Good recipe, but if you want it even nicer add a tablespoon of sherry. I used fat free 1/2 and 1/2 instead of milk.

Batman's Best Caesar Dressing

Made exactly as stated. Delicious! You need only a tablespoon at a time mixed with the Romaine or you will get too much dressing!!! We added some Parmesan on top with croutons.

Lamb Feta Peppers

Very good, but I used a pound of lamb, 3/4 c rice and 2/3 c feta. But my 2 peppers were very big! I'm not a big lamb lover, but I really liked these.

Alfredo Blue

After reading other reviews to make this I doubled the amount of cheeses and put only 1 cup of fat free 1/2 and 1/2 instead of the heavy cream for 8 oz of dry pasta. I also put in a can of mushrooms as someone suggested and that was an excellent idea. It was still a hair runny, so I combined the pasta with the sauce and let it sit for 5-10 minutes covered before eating. Then the sauce stuck to the pasta nicely. Very good change for pasta.

Snickerdoodles V

This is the same exact recipe my girlfriend's mother passed down to her and my girlfriend is 61, so you can tell it is a tried and true keeper! I did flatten a bit with the bottom of the glass. They freeze wonderfully as well and make a good Christmas cookie.

Rosemary Sherry Pork Chops

I halved this recipe for the two of us, but I did not halve the broth ,sherry and rosemary. I'm glaad I didn't too because there would have been no sauce at all. This was a tasty, easy, quick way to do pork chops and chardonnay can also be used instead of the sherry for a slightly different but good flavor.

Zucchini Soup I

Bland, not much taste. Also I did not like the color of this soup. I helped the flavor by adding 1/2 cup chardonnay, but my husband still thought it wasn't very good. Won't keep this one.

Cajun Crab Soup

5 stars but with my adjustments. I also used fat free 1/2 and 1/2 to cut down on the calories, but to keep it thick I only used 1/2 the amount of chicken broth. Excellent amount of spices because they didn't over power the flavor of the crab, but calling it "cajun" leaves a little to the imagination. Not really "hot" enough to do that.

Gazpacho Pasta Salad

I only made a half batch and I ended up putting 2 TBSP of jalapeno salsa into it. Even that didn't do much good. to quote my husband, "This is not a keeper".

Lamb Chops with Balsamic Reduction

My husband said these were good. (I don't like lamb particularly so didn't have any) However, the amount of balsamic vinegar, chicken broth and butter could be halved. I reduced it as directed and still threw lots away.

Instead of the salsa I used 1 can Rotelle extra hot tomatoes and 1/3 c ketsup. I made the meatballs bite size so you got one in every spoonful of the soup. Very good and spicy!

BUSH'S® Vegetarian Barbecued Squash

Put this in a dish that fit the squash, so didn't need to cut the bottom. Omitted the butter--not necessary and why put those fat calories in your body if you don't need to? Had too many baked beans to fit in the squash, so put them in a baking dish that I sprayed with non-stick spray. Baked at 350 for an hour (put the dish of beans in for about 30 minutes). This was a very tasty different way to serve squash. I served this with a chicken recipe that I also baked.

Thai Salmon Salad

Too much basil!1/2 that amount is more than plenty, but the rest of it wasn't as tasty the first time I made it. So instead of having it for lunch, I scraped it off the lettuce and let everything marinate til suppertime. Then it was delicious! (on new lettuce of course!)

Pesto Cheesy Chicken Rolls

This was easy. Made it with my own pesto . However I felt 50 min at 350 was too long and it would come out dry. Thank goodness I only cooked it 29-30 min. because it wasn't quite dry. Maybe the very ends were, but the rest were good.
