Fresh Asparagus, Tomato, and Feta Salad

Put twice as much asparagus, half as much salt, my tomato was big. Otherwise just as stated. Everyone loved it! And so easy to make!

Cajun Style Stuffed Peppers

didn't have any creole spice, so used Old Bay instead and a heaping 1/4 tsp of black pepper. as another reviewer did, I also used chorizo, used cooked brown rice and omitted the broth. increased the tomato sauce to 15 oz. Really good!

Bacon & Eggs Spaghetti

I was intrigued with this recipe and with a couple of adjustments for personal reasons, it was delicious! Did not let us down! It was easy to make, not time consuming and used ingredients that are usually on hand.. Since I was making for only 2 I used 8 oz of pasta, 6 regular sliced bacon, 1/2 c chopped onion, 5 eggs, 1-2 Tbsp milk with the eggs and 6 oz velveeta + 1/4 c 3 alarm cheese sliced finely. Make sure you continuously stir the mixture once you add the egg/cheese mixture to the other ingredients because it could stick very quickly!

Lamb Barley Soup

Didn't have any barley. It was lentils, so I tried it with them. Omitted carrots. We loved it! One of the best lamb recipes I have eaten because I' m not a big lamb fan. Will make again using barley because I know it will definitely be a keeper!

The Best Meatballs

Excellent! I only put them in the olive oil long enough for them to keep their shape, them put them in my sauce to simmer away for 3-4 hours. They were absolutely delicious! Will make these from now on when I don't want to spend all the time making my stuffed ones.! Oh BTW I only used 90/10 o/o lean ground beef to make these.

Turkey Posole

,I was very disappointed in this soup. It didn't have the flavor I thought the ingredients would give it. This was way too bland for our tastes, so I added a can of extra hot Rotel Tomatoes, a can of whole kernel corn and some jalapeños. All that made it thicker and spicier and tastier.

I also added about 1/4 tsp garlic salt and the cup of shredded cheddar. I used Can't Believe It's Not Butter for the shortening. Delicious, easy and quick. What more could you want?!

Chorizo and Broccoli Rabe Pasta

I had good spicy chorizo to make this, but only broccoli florets. Found it to be a bit dry for our tastes, so added 1 can of diced tomatoes and it was perfect.

Slow Cooker Spicy Chicken

Yummy! Used 2 huge chicken breasts, 1 Tbsp minced onion instead of the red one and a whole chipotle chopped with seeds and about a heaping Tbsp of adobo sauce. Cooked on High for 4 hours then turned it off until we were ready to eat about 1 1/2 hours later. Delicious over brown rice and there is enough left over for 1 person's meal.

Mom's Baked Beans I

This didn't have enough beans for me, so I am rating what I did. I used 2 pork&beans undrained, 16oz size cans, 2 drained pinto beans, 2 drained dark red kidney beans and 1 can of refried beans. I used 3 medium onions, doubled the molasses and barbeque sauce (Kraft hot) and used 2 tsp of hickory smoke salt. Do not add any salt! I didn't have any liquid. Cooked it all in a big bean pot and stirred every half hour. Total cooking time 2 1/2 hrs. on 325F.

Black Beans and Rice

I made this with adding another heaping tsp of cayenne, 1 cup instant brown rice instead of the white rice, reduced the broth to 1 cup and cooked it for only 5 minutes. Then I added the beans and let the whole thing sit while we ate our salads. It was very moist and tasty! Way more than the two of us could eat at one meal. For the leftover, I will add a can of stewed tomatoes, a can of whole kernel corn drained, some more cumin and cayenne and some fresh lime juice. It will be filling enough to have as a main course.

Mock Pasta Alfredo

This was thick to begin with in the processor. I warmed in on a Very low heat (2) and added imitation crab pieces to it. It did get thinner as others stated, but was right consistency for serving. Taste wise I thought the garlic was overpowering (& I love garlic!). There was no Parmesan in it and that flavor was definitely something that should be in Alfredo sauce, mock or not. Luckily I only made a half recipe for the two of us, so with what was left over I will add about 1/4 -1/2 c of parm to improve the flavor. I doubt if I will make this again.

Poblano Chile Pepper Soup

When you have to make so many changes to a recipe, it is not the original that you are rating, so unlike many other reviews who told all the things they added to make this delicious, I will say it was way too much work for a soup that was not to our liking. It wasn't that spicy at all, it was relatively thin and really lacked a good flavor. Won't bother trying to improve on it.

This is not thick gravy as another reviewer wrote. If made correctly it's like tiny dumplings in the beef soup. It tasted quite good and is an extremely cheap soup that is very filling.
