Chuck's Come On Ice Cream (or Night of the Red Death) Chili

This is good chili, but it's not hot. I used 3 jalapenos and 1 habanero. After making exactly as the recipe calls for, I added six cans of kidney beans because chili to me is with beans! Then more jalapenos and 2 more haberanos along with more chili powder and now there's some spice!

Bacon Quiche Tarts

Excellent! And the best part is you can cook & crumble the bacon and mix all the ingredients for the filling the night before and refrigerate. Then in the morning just put them together. I doubled the recipe and everyone enjoyed them immensely.

Nice taste, but too dry for us. I added a cup of sour cream and 2 Tbsp milk to the dressing and then it was perfect. Will make again for sure.

Delicious just as the recipe is written! I made this for our main course because it sounded so good. Enough for two more meals as well. Will freeze enough for one--I'm sure it will be as delicious reheated as it was the first time!

Key West Chicken

I mixed this as the recipe says except I used a roaster instead of chicken breasts. I lifted the skin all over the bird, poured about 1/2 of the marinade under the skin. Let set in bag to marinate. Cooked on 450 for 20 min. then 350 for 1 1/2 hrs. Black but delicious and juicy!

Calypso Rice and Beans

Faster to open a can of black beans and rinse --rice needed to cook longer, but I had the time--used only a 6oz can of pineapple and after tasting added more jalapenos for us. Good and will make again using these adjustments.
