Rosemary Garlic Rub

Reviewed: Aug. 19, 2004
Just too salty for us. I will use 1/2 the amount and it will be delicious. Flavor was good, but for the salt. We had it on pork chops and I will definitely try it on chicken.

Rosemary Turkey Meatloaf

Reviewed: Aug. 19, 2004
I only made 1 change in this recipe. Had to use up ground pork after Hurricane Charley came through, so used it in place of the turkey. Very good!

Frogmore Stew

Reviewed: Aug. 15, 2004
I halved this recipe for the two of us and have enough for another meal. Will just add another ear of corn! I will shell the shrimp first next time and it won't be quite so messy. Absolutely delicious with all that Old Bay!!

Chipotle Peach Salsa with Cilantro

Reviewed: Aug. 13, 2004
Used more chipotle, about 2 TBSP, but we like spicy. This is very good that way!

Green Salsa

Reviewed: Aug. 11, 2004
I doubled the amount of tomatillas since I used canned ones and they aren't as big. Doubled the garlic for flavor. Didn't bother with the canned chiles because of the tomtillas. Used 6 fresh jalapenos leaving the seed in 3, but we like spicy! Very good. Use 2 habaneros with seeds removed for a similar hot salsa. Served it with baked chips and fresh veggies, Yum!

Overnight Apple Cinnamon French Toast

Reviewed: Jul. 28, 2004
Delicious! With a bit of alteration on my part. I used 4 big Granny Smith apples. Peeled and sliced thin put in a saute pan with 1/2 c. brown sugar,1 c water and saute covered, stirring when necessary. When apples are done, add 1 tsp cornstarch that's been mixed with a little water to the apple mixture. Cook until thickened like an apple pie would be. Had to used 21 slices of bread instead of 20 also. It was a big hit at Sunday morning golf! Some women said "very rich--but delicious" while some of the men said, " I'll have another piece and I can't eat another bite I'm so full!"

Dick and Red's Bacon Clam Dip

Reviewed: Jul. 23, 2004
I halved this recipe for 6 people but kept the hot sauce at 10 drops. Served with homemade baked tortilla chips. Yummy!

Chicken Salad Wraps

Reviewed: Jul. 23, 2004
Good using nonfat sour cream instead of mayo! But I mixed everything together except the lettuce and then made a wrap.

Amazing Banana Sorbet

Reviewed: Jul. 17, 2004
This is a very unappetizing dish to look at! Unless of course you like different color browns for dessert! Too sweet also as another reviewer noted.

Mexican Lasagna I

Reviewed: Jun. 27, 2004
This is an easy recipe that tastes very good. As others noted use only 1 cup of water instead of 2 as it says and the consistency is perfect. For my husband and I, next time I will add a can of jalapenos because we like spicier food.

This dish is unappetizing to look at. It tasts much better than it looks! I wouldn't serve it to company because of its appearance.

Next time I will omit the salt. The anchovies are salty enough.

I added red hot pepper flakes and used hot breakfast sausage to give this some zip. It was much better that way.

Shrimp and Crab Enchiladas

Reviewed: Jun. 5, 2004
I also coated each tortilla with lite cream cheese. I only got 10 8" tortillas out of this recipe, but that was plenty for a dinner for four. Very tasty! As another suggested, I cut the shrimp into pieces.

Skillet Balsamic Chicken

Reviewed: May 30, 2004
I didn't cut the breasts, but pounded them down. Cut the olive oil and chicken by half, used merlot instead of red wine vinegar, but left the rest of the ingredients as is. There was plenty of sauce, but serving 4 it would not make enough sauce for me.

Saltimbocca alla Pollo

Reviewed: May 29, 2004
This was good! However, I made it for 2, but I did not change the ingredients of the sauce part and I'm glad I didn't!!! There's a nice amount to put on the chicken after you cut it up and it's a very nice flavorful sauce.

Fiesta Dressing

Reviewed: May 29, 2004
I made this with the hot chiles and tomatoes. Delicious for a dipping sauce for vegetables. For the salad dressing though, I wouldn't drain the tomatoes and chiles and it wouldn't be quite so think.
