Creamy Dill Cucumber Toasties

Reviewed: Mar. 7, 2006
Make the crostini ahead of time and it helps save time on the day of a party. Good, easy but use fresh dill-- it's a much much better flavor!

Egg and Sausage Casserole

Reviewed: Mar. 7, 2006
I made this in individual cups for a morning golf outing. Everybody loved them. For single servings use 2 pkgs of rolls and 4 more eggs. This will yield 16 servings. Bake as recipe suggests checking after 23 minutes to be sure you don't overcook.

Irresistible Broccoli Cheese Soup

Reviewed: Mar. 4, 2006
No where near enough broccoli in this soup. I cooked another 2 heads separately then put them in the food processor before adding to the original recipe. That made it better and the cheese didn't separate. I toasted the nuts as another reviewer suggested. I thought it had too nutty a flavor for my concept of broccoli/cheese soups.

Kentucky Hot Brown

Reviewed: Mar. 3, 2006
I was terribly disappointed in this recipe. It didn't taste at all, which was delicious, like I had in a restaurant. This was bland and it didn't have anywhere near enough sauce to "smother that baby" as the person who submitted this recipe suggested. I will try another recipe from another source that uses cheddar (at least 1 cup) for the sauce and parmesan.

Good and spicy since I added one habanero to the mix. Very tasty and easy to make.

Slow Cooker Chicken Taco Soup

Reviewed: Feb. 3, 2006
Very good and easy! We like soups thicker than this broth, so I just added 2 cans of Great Northerns to the food processor when I shredded the chicken and it was wonderful.

Yum, Yum, Yum is all I can say! The more cajun spices you put on them the hotter they are! Great!

Sassy Chicken Enchilada Dip

Reviewed: Jan. 26, 2006
Delicious! Every time I bring it someplace people comment about how good it is! I use the Rotel Extra Hot Tomatoes with Green Chiles. Nice thing is it's even better if made a day ahead of when you plan to eat it.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Jan. 26, 2006
Delicious and easy. Made only 1 change--didn't have fresh mushrooms and used 2 4oz cans instead. My garlic were big because we like the taste and the balsamic vinegar was wonderful. However, I would not recommend serving if you're not sure whether or not someone might like the taste of balsamic vinegar.

Spicy Sweet Potato Soup

Reviewed: Jan. 19, 2006
I liked this for a different tasting soup. Didn't have fresh gingerroot so I used 1 tsp of ground ginger and it was plenty. Loved the peanut butter flavor! Great recipe for freezing when sweet potatoes are cheap!

Linguine with White Clam Sauce

Reviewed: Dec. 31, 2005
I added quite a bit of red pepper flakes to this and it was very good. But my one complaint was that it did not thicken at all. I even added 1/2 Tbsp cornstarch (mixed in with a dribble of water) near the end which helped a little. I had to serve it in soup bowls and soak up all the sauce with French bread. Puta lots of Parmesan on it too!

Salmon in Creamy Silk Sauce

Reviewed: Dec. 26, 2005
Very nice flavor and I used talapia fillets instead of salmon. My one complaint was that after 25 min the butter wasn't even melted and I had the water on a low boil the entire time. So, popped it in the micro for 4 min on hi and it was done and flaky!!!

Roasted Rack of Lamb

My husband said this was delicious. It didn't cook in the amount of time specified, so I just stuck it in the micro for 1 min on high and it was done.

I halved this recipe because I only had to serve six. We all liked it on multigrain crunchy crackers. And there wasn't any left!

Sizzling Southwest Burgers

Reviewed: Nov. 2, 2005
The peppers and onions were too crunchy in the cooked burger. I'd pop them in the micro for a minute before combining them with the meat mixture.

Jalapeno Cocktail Squares

I used 5 jalapenos and this was NOT spicy. Next time I will not seed them or maybe even use a habanero instead. Freezes well, by the way!

Did not seed jalapeno because we like the extra spice. My husband had his warm and I took them at room temperature for an appetizer. Delicious both ways and easy to make!
