Ham and Beans

Delicious, but with some adjustments. Instead of the beans I used 2 cans navy beans undrained and 2 cans black eyed peas undrained. Instead of the cayenne pepper I used one whole cayenne with the seeds included. I just chopped it up with the onion in the food processor. Used a ham bone from a spiral ham and added enough water to cover all. Let it simmer til the ham fell off the bone. We loved it!

Chilie Pork Tacos

This was good and easy to make. Can be made ahead of time and reheated for supper. Only thing I changed was the cayenne pepper, because I grow my own, I used 1 whole pepper with seeds instead of the ground pepper the recipe called for.

Chicken with Chipotle

We loved the taste of this, but I changed it around a bit. Used boneless, skinless breasts and sauted them in a nonstick pan. Pushed them aside to melt the margarine and stirred everything in together. Made in the afternoon and then reheated it in the microwave when we were ready to eat. Sliced the breasts then poured the sauce over them. Yummy!

Chipotle Shrimp

This is not a main dish. There isn't anywhere near enough sauce to put over rice, but what an appetizer it makes! Make early in the morning and store in refrigerator til cocktails are served. Everyone raved!!

Roast Leg of Lamb with Rosemary

This was excellent made with the balsamic vinegar,smidgen of lemon juice, and about a tablespoon of olive oil. I am not a big fan of lamb, but this recipe changed my mind. Just wish I had know about it 30 years ago. We would have had lamb more often! As others stated I used the 2 cups of water in the pan and tented with foil.

Homemade Tomato Sauce I

I used Roma tomatoes so it was nice and thick without having to leave it uncovered the last 2 hours of cooking. However I did add 3/4tsp fresh thyme, 3/4tsp fresh oregano, 1tsp Lawry's seasoned salt and 1/2tsp fresh ground pepper. I pureed everything as other readers did. I used this sauce to make lasagna and with what was left I served as a side dish with Italian sausage. This is a good sauce to make if you are serving to people who do not like spicy, hot. For just my husband and I, I would also include a tsp of red pepper flakes. Thanks for a good basic recipe using fresh tomatoes!

Make the crostini ahead of time and it helps save time on the day of a party. Good, easy but use fresh dill-- it's a much much better flavor!

Egg and Sausage Casserole

I made this in individual cups for a morning golf outing. Everybody loved them. For single servings use 2 pkgs of rolls and 4 more eggs. This will yield 16 servings. Bake as recipe suggests checking after 23 minutes to be sure you don't overcook.

Irresistible Broccoli Cheese Soup

No where near enough broccoli in this soup. I cooked another 2 heads separately then put them in the food processor before adding to the original recipe. That made it better and the cheese didn't separate. I toasted the nuts as another reviewer suggested. I thought it had too nutty a flavor for my concept of broccoli/cheese soups.

Kentucky Hot Brown

I was terribly disappointed in this recipe. It didn't taste at all, which was delicious, like I had in a restaurant. This was bland and it didn't have anywhere near enough sauce to "smother that baby" as the person who submitted this recipe suggested. I will try another recipe from another source that uses cheddar (at least 1 cup) for the sauce and parmesan.

Slow Cooker Chicken Taco Soup

Very good and easy! We like soups thicker than this broth, so I just added 2 cans of Great Northerns to the food processor when I shredded the chicken and it was wonderful.

Sassy Chicken Enchilada Dip

Delicious! Every time I bring it someplace people comment about how good it is! I use the Rotel Extra Hot Tomatoes with Green Chiles. Nice thing is it's even better if made a day ahead of when you plan to eat it.

Chicken Breasts with Balsamic Vinegar and Garlic

Delicious and easy. Made only 1 change--didn't have fresh mushrooms and used 2 4oz cans instead. My garlic were big because we like the taste and the balsamic vinegar was wonderful. However, I would not recommend serving if you're not sure whether or not someone might like the taste of balsamic vinegar.

Spicy Sweet Potato Soup

I liked this for a different tasting soup. Didn't have fresh gingerroot so I used 1 tsp of ground ginger and it was plenty. Loved the peanut butter flavor! Great recipe for freezing when sweet potatoes are cheap!

Linguine with White Clam Sauce

I added quite a bit of red pepper flakes to this and it was very good. But my one complaint was that it did not thicken at all. I even added 1/2 Tbsp cornstarch (mixed in with a dribble of water) near the end which helped a little. I had to serve it in soup bowls and soak up all the sauce with French bread. Puta lots of Parmesan on it too!
