Roasted Rack of Lamb

Reviewed: Dec. 26, 2005
My husband said this was delicious. It didn't cook in the amount of time specified, so I just stuck it in the micro for 1 min on high and it was done.

Wasn't hard to make at all! And absolutely delicious. Had it for my Christmas party this year and there wasn't a bit left!

Tuna Mousse

Reviewed: Nov. 2, 2005
I halved this recipe because I only had to serve six. We all liked it on multigrain crunchy crackers. And there wasn't any left!

Sizzling Southwest Burgers

Reviewed: Nov. 2, 2005
The peppers and onions were too crunchy in the cooked burger. I'd pop them in the micro for a minute before combining them with the meat mixture.

Jalapeno Cocktail Squares

Reviewed: Oct. 21, 2005
I used 5 jalapenos and this was NOT spicy. Next time I will not seed them or maybe even use a habanero instead. Freezes well, by the way!

Delicious Black Bean Burritos

Reviewed: Oct. 5, 2005
Did not seed jalapeno because we like the extra spice. My husband had his warm and I took them at room temperature for an appetizer. Delicious both ways and easy to make!

Chicken Nachos

Reviewed: Aug. 17, 2005
If it's not spicy enough add some jalapenos instead of the green chiles. Then it was wonderful. Easy and the chicken can be made ahead of time.

Zucchini Cheese Garlic Appetizer

Reviewed: Jul. 27, 2005
Delicious--could be served as a vegetable! At Thanksgiving, a little gravy and it could take the place of stuffing!

EZ Party Cheese Ball

Reviewed: Jul. 27, 2005
This recipe was the biggest bust I've ever served. Not one person took a second cracker. It was so salty nobody liked it.

Old Bay® Steamed Shrimp

Reviewed: Jul. 15, 2005
Can't beat it! Been doing shrimp like this for years. Amount of Old sprinkled over afterwards depends on how spicy you like your food.

Hungarian Lecso

Reviewed: Jul. 1, 2005
This was very good, but didn't have enough sauce for us, so I simply used a 24oz can of spaghetti sauce and added 1/2 cup of water.

Acapulco Chicken

Reviewed: Jun. 29, 2005
I substituted 1 habanero seeded for the jalapenos because I knew it did not sound spicy enough for our tastes and it was pretty good, but we ate it like a stew in a bowl. Not over rice.

Coconut Lentil Soup

Reviewed: Jun. 29, 2005
Tasted nothing like the coconut lentil soup I had in a restaurant and thought was delicious. This was just ok with a strong taste of curry.

Stuffed Jalapenos

Reviewed: May 28, 2005
Good, easy, fast. I left the jalapenos with the seeds in since we like spicier foods.

Asparagus Appetizers

Reviewed: Mar. 31, 2005
I've had this recipe for years except there is no butter involved! You can cut the rolls in half, place seam side down on a cookie sheet, place in freezer til hard, remove from cookie sheet and store in a ziplock bag until ready to use. Spray the cookie sheet with non-stick spray before baking. Lots less calories and people always say how great they taste. Have extra bread on hand because I always end up with more filling than 20 pieces will hold. Enjoy!

Pollo Fajitas

Reviewed: Mar. 4, 2005
Good & easy, but I like to marinate overnight for much better flavor. Also if you're working it's easier to come home and have it waiting for you to saute up! I omitted the oil and just used olive oil spray on the pan. Works just as well.

Very good! I used navy beans instead of cannellini beans and they worked very well.
