Scallops with White Wine Sauce II

Italian Love Cake

I followed this recipe exactly. I was so disappointed in it. Oven was at 350 before I even put it in and it still wasn't done in 90 minutes. Well, the top sprang back up when touched, so I THOUGHT it was done. However I couldn't get it out of the pan. The bottom was like a wet glue. I love moist cake and that's one reason I tried this recipe. Sorry, but I also thought it had an aftertaste. Will not make again--an expensive dessert with little rewards. My 36 year old son took one bite and said, "what is in this?"

Gnocchi Bake

Using hot Italian sausage this was yummy. Easy to make the day before and then just pop in the oven for supper. If the gnocchi was mushy or gummy, guys, you overcooked it. Not the gnocchis fault!!! I did use about 16 oz of sauce because it looked a hair dry.

Pasta Siciliano

This dish we enjoyed very much! However I did a couple of preparations differently. I followed the amounts and ingredients exactly except that I used only 1/2 lb of the bowties. I cooked the bowties the day before and then right before mixing them into the other ingredients, I popped then in a colander into hot tap water. This achieves the same results but saves lots of time when you need it most! I sauted them in the sauce for a few minutes before mixing in the feta. Guess what--the little bit that was left over was eaten cold by my son and his wife. They said it was really good as a pasta salad!!

Caramel Filled Chocolate Cookies

Very disappointing recipe. Tastes good but the eye appeal is lacking. Too many caramels leaked out while cooking. Needs to stay on sheet longer than 4 minutes or else they fall through the wire racks. I needed something delicious for a cookie exchange with the recipe, but I guess I won't take these after all. Way too much work for a poor outcome, but the family will eat them anyway!

Hot Bean Dip

This is a good bean dip for my friends who don't like really spicy food. Next time I will use Jack with jalapenos instead of plain Jack for the cheese. I also will probably throw in a habanero or 2 or 3 jalapenos since we like spicier foods.

Chocolate Bourbon Pecan Pie

Everyone raved it was delicious. Only thing I did differently was what others had recommended and put the chocolate chips and pecans in bottom of shell, then poured mixture over them. Easy, yummy and fattening, but who cares once a year?!

Make-Ahead Mashed Potatoes

I also have made a similar recipe for years, but my recipe calls for 1 TBSP of minced onion rather than the onion salt and 1/2 tsp seasoned salt. And only as much milk as you want for the right consistency. I like to drizzle the butter over the top, but being weight conscious I only use a tablespoon instead of what the recipe calls for. Add a sprinkling of paprika on top before you bake and it gives a pretty looking finished product.

Doris's Shrimp Salad

Way too much mayo, but that's easily remedied. I started off using only 1/4 cup and adding a Tbsp at a time. Just enough mayo to hold the ingredients is what I like. This was delicious if you cook the shrimp using the Old Bay recipe found on this sight. I stuff green peppers with this for my friends who don't like raw tomatoes and then we're all happy!

Thai Chicken Dip

1st of all this was not hot. I ended up putting 1/2 heaping teaspoon of red pepper flakes in after it was done because it wasn't spicy. Even with that addition it wasn't that hot. Some people didn't like the sweetness and one person I heard say, "Peanut butter? " Maybe she was allergic to peanut butter, I don't know, but she didn't eat any of it. Won't make this one again I can assure you.

Philly Cheesesteak Sandwich with Garlic Mayo

Whether or not this is a true Philly Steak sandwich, I don't know, but I do know it was yummy! Loved the garlic mayo. Will most likely not use regular mayo on anything again!!!

Quick Chicken And Wine

I used only 2 chicken breasts, 2TBSP butter, the same amount of wine, but a whole cup of parmesan cheese! Sauted til golden then added the wine, but did not cover. Turned the heat down to low and before 20 minutes was up, everything was done. The chicken fingers were much crisper this way and the flavor was delicious.

Seven Layer Tortilla Pie

I do not know of a pie plate that would hold anything this high! I placed mine in a 2 1/2 quart casserole dish that is about 4" high. Guess what? It made that full plus a pie plate with a layer of each. It was good the first night, but since it made so much we had leftovers! The second night after reheating in the micro it was very dry. Easy way to remedy that was to pour on the salsa!!!

Ham and Beans

Delicious, but with some adjustments. Instead of the beans I used 2 cans navy beans undrained and 2 cans black eyed peas undrained. Instead of the cayenne pepper I used one whole cayenne with the seeds included. I just chopped it up with the onion in the food processor. Used a ham bone from a spiral ham and added enough water to cover all. Let it simmer til the ham fell off the bone. We loved it!
