BUSH'S® Vegetarian Barbecued Squash

Put this in a dish that fit the squash, so didn't need to cut the bottom. Omitted the butter--not necessary and why put those fat calories in your body if you don't need to? Had too many baked beans to fit in the squash, so put them in a baking dish that I sprayed with non-stick spray. Baked at 350 for an hour (put the dish of beans in for about 30 minutes). This was a very tasty different way to serve squash. I served this with a chicken recipe that I also baked.

Thai Salmon Salad

Too much basil!1/2 that amount is more than plenty, but the rest of it wasn't as tasty the first time I made it. So instead of having it for lunch, I scraped it off the lettuce and let everything marinate til suppertime. Then it was delicious! (on new lettuce of course!)

Pesto Cheesy Chicken Rolls

This was easy. Made it with my own pesto . However I felt 50 min at 350 was too long and it would come out dry. Thank goodness I only cooked it 29-30 min. because it wasn't quite dry. Maybe the very ends were, but the rest were good.

Spinach Quiche

Delicious. But too much to fit in a (9" pie plate. It ran over under the crust, so it was difficult to get out in a couple of spots. Next time I'll use 2 8" ones.

Scallop and Chorizo Pasta

I'd give it a 5 except I changed a few things. The first time I made this, I did exactly as the recipe called to do and was disappointed because the pasta ended up being too dry for us. Also there were not enough scallops for that amount of pasta (again for us). So this time I used shells for the pasta, cut the casing off the chorizo and cooked it crumbly. As I did that the pasta was cooking. Then I did the peppers and added some cayenne peppers without the seeds to the red peppers. Next I did the scallops but used a whole pound cut into pieces. I put in a half pound of shrimp as well. When the pasta was done, I drained it then added the peppers, scallops and shrimp to it. Finished as the recipe suggested , but at the end when the wine had reduced by half, I returned all the pasta etc. to the pan and kept on stirring it until everything was coated well. The shells caught part of the chorizo and peppers and it was absolutely delicious. Thanks for a starter recipe!

Roasted Red Potato Salad

I have made this potato salad at least 6 times before I finally realized that I never rated it, so here it is. It's a 5 star keeper because you can do so many things with it. Made it exactly as the recipe says. I have used red and regular white potatoes. Red and yukon golds. No eggs or as many as I've had in the frig up to the specified 6. Regular Hellman's Mayo cut in half with nofat sour cream. Reduced fat Hellman's using the specified amount. Real fried bacon extra crunchy for crumbling. Imitation bacon bits. Added a chopped up stalk of celery. Reduced the amount of onion when I felt my onion was extremely strong. Increased the amount when I used a Vidalia. But one thing I do no matter how I make this recipe is that I double it. It doesn't last long enough otherwise!!!!!

Garlic Chicken

Easy and crispy from the oven! I used legs instead of breasts and marinated them all day in the olive oil and garlic. Cooked on 400 instead of 425 because I had something else in the oven as well. They were done in 40 minutes and I turned them after 30. I also sprayed the pan because I didn't want them to stick.

Amy's Spicy Beans and Rice

I used 1 16oz can of red kidney and a 24oz can of pinto beans for this. Used 2 habanero peppers instead of the jalapenos because I knew they wouldn't be spicy enough. I then added the cooked rice into the casserole dish. After 30 minutes I put the cheese, olives and chives(instead of green onions)and another 1/2 cup of cheese on top. Only put it back in for 2-3 minutes because the cheese was melted. It was still so hot after sitting on the table for 10 minutes we couldn't eat it. I would suggest letting it sit for about 20 minutes before you want to eat it. Ours was very creamy and spicy. It is an easy, quick, nutritious meal that I will definitely make again. 4* only because I changed a few things!

Shrimp and Crab Bisque

Delicious! Made exactly as the recipe says. I used chardonnay for the white wine and no fat 1/2 and 1/2. Still thick and yummy without the calories of real 1/2 1nd 1/2!

Shrimp Marinaders

I followed this recipe exactly as stated. If you like your onion to totally overpower the shrimp this is for you, I guess. Otherwise it was very bland. Maybe I didn't use the right kind of hot sauce because this was not hot at all. Out of the 1 1/2 lbs of shrimp called for in the recipe, I had just shy of 1 lb left after my guests left. Guess that tells you what they thought of it also, huh? I'll stick to Chipolte Shrimp or Rebel Angels from this site, thank you!!!

Made this just like the recipe except I didn't have any molasses. They were very good and will be even better with the molasses. They will probably thicken up faster when it is in the dish as it should be.

Simple Salmon Chowder II

Pretty good and quite easy to put together. I didn't realize that I didn't have any evaporated milk when I started to make this recipe, so I just used liquid nonfat coffee creamer instead. It did the trick. Also increased the dill as others suggested. Because I grow my own I used fresh.

Cream of Cauliflower and Stilton Soup

Didn't use cauliflower for garnish. so that cut out step 1. Used 1 big onion because I didn't have a leek.Used 1 cup instant rice and 1 cup of water for the potato. Added 2 carrots cut in 1" or so chunks. Did not use any oil, just put cauliflower through broth and carrots, peppers and salt in a soup pot. Cooked til cauliflower was tender. Removed most of it to food processor and pureed. Returned to pot and added sherry, cream and 4oz of blue cheese instead of the Stilton. Very tasty!

Used white pepper instead of black for a spicier flavor, doubled the amount of sherry for a smoother flavor and omitted the parsley for garnish because I didn't have any! Very good.

Adobo Sirloin

Yummy! Spicy! Easy! Versatile! What more could you ask for. Made it with chicken breasts that marinated for a couple of hours. Just delicious as a sandwich, on a plate as an entree or sliced up and put on a salad the next day.
